I'm a vegan WWer, too! I find that it works quite well for vegans, since many whole vegan foods are low(ish) in PointsPlus.
I started following the Simply Filling Technique (Core basically) in February, and am LOVING IT!
Since now I only count PointsPlus for non-Power Foods, I'll just share a daily menu with you. Here's the plan for today:
breakfast- oatmeal made with light soy milk and slices of peach
lunch- barley mixed with steamed vegetables, garbanzo beans, 1 tsp EVOO
dinner- brown rice mixed with steamed veggies, black beans, 1 tsp evoo
snacks- fruits, veggies, shredded wheat w/ soy milk
