Smile Snack Breads

Banana Bread
Cooking Light Critics Message Board

1 cup sugar
1/4 cup light butter, softened
1-2/3 cups mashed ripe banana (about 3 bananas)
1/4 cup skim milk
1/4 cup low-fat sour cream
2 large egg whites
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Cooking spray

Preheat oven to 350°F.
Combine sugar and butter in a bowl; beat at medium speed of a mixer until well-blended. Add banana, milk, sour cream, and egg whites; beat well, and set aside.

Combine flour, baking soda, and salt; stir well. Add dry ingredients to creamed mixture, beating until blended.

Spoon batter into 4 (5 x 2-1/2-inch) miniature loaf pans coated with cooking spray. Bake at 350°F for 45 minutes or until a wooden pick inserted in center comes out clean. Let cool in pans 10 minutes on a wire rack; remove from pans. Let cool completely on wire racks.

Post Strawberry Bread



Strawberry Bread

3 cups flour (all purpose or whole wheat)
1 tsp baking soda
1 tsp salt
1 Tbsp. cinnamon
1/2 cup sugar or Splenda (may need to add more)
2 tsp vanilla
4 eggs or 1/2 cup Egg Beaters
2 cups strawberries, chopped (if using frozen, thaw)
1 1/2 cups unsweetened applesauce
1 1/4 cups chopped pecans (optional)

Mix together the dry ingredients. Combine the eggs, strawberries, and applesauce and add
to the dry ingredients. Stir in pecans. Pour into 2 9inch loaf pans. Bake at 325 for about 1 hours.

Approximately 15 points for each loaf, so about 2 points a slice

Because there are so many variations possible in this recipe, it would be wise to recalculate
the points based on the ingredients you choose. You can certainly lower the point count by
not using the pecans.

Default Another Banana Bread Recipe

From Stevia Canada Site

Ingredients:
2 eggs
2/3 C. melted butter
1 C. mashed bananas
1/3 C. milk
1 tsp vanilla
2 1/2 C. wholewheat flour
1 tsp baking soda
1/2 tsp salt
1 tsp stevia concentrate powder
1/2 C. chopped nuts


Instructions:
Combine eggs, butter, bananas, milk and vanilla. In another bowl combine remaining ingredients, then add banana mixture to it. Mix until moistened.

Pour into greased 9X5 loaf pan and bake in a pre-heated oven of 350 for one hour.

Default Applesauce Bread

From Stevia Canada site

Ingredients:
1 1/2 cups all purpose flour
1/4 cup wholewheat flour
1/2 cup bran
1 tsp baking soda
1/2 tsp salt
1/2 tsp stevia concentrate powder
1/2 cup shortening
1 egg, beaten
1 1/4 cups applesauce
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger


Instructions:
Add all dry ingredients together in one bowl. Cream in shortening. Add egg and applesauce in separate bowl and then fold into dry ingredients.

Bake in a 5" X 9" greased loaf pan at 350 for 35-40 minutes.

Default Oatmeal Apple Muffins

From Stevia Canada Site

Ingredients:
1C. whole wheat flour,
1C. rolled oats,
1/2 tsp salt,
3 tsp baking powder,
1/2 tsp nutmeg,
2 tsp cinnamon,
1 1/2 tsp Stevia Canada Stevia,
1 egg, 3/4C. milk,
1/4C. apple sauce,
1 med. apple cored and chopped
3/4 C. raisins (optional).

Instructions:

Mix first 7 ingredients thoroughly and mix remaining ingredients in separate bowl.

Gradually mix the dry ingredients into the moist ingredients. Spoon into greased muffin tins and bake 15-20 minutes in a 400 degree oven.

Cranberry Pumpkin Bread (Sugar, Oil, Dairy and Egg-Free)

2 cups of whole wheat pastry flour
1/3 cup oat bran fiber
1 tsp baking soda
1 tsp baking powder
1 tsp pumpkin pie spice
1/2 cup dried cranberries
1 cup applesauce
3/4 cup cooked mashed pumpkin (or canned spiced pumpkin)
3/4 cup juice or non-dairy milk (soy, rice or nut)

Combine the flour, baking soda, baking powder, and pumpkin pie spice
and mixing well. Combine all wet ingredients, adding the vinegar last. Stir together the dry and wet ingredients until the dry is just combined. Quickly coat an 8x4inch loaf pan with nonstick cooking spray. Pour into the loaf pan and bake at 350 degrees for about 50 minutes, or until a knife inserted in the center of the loaf come out clean.

Note: This bread was good but a bit on the dry side. Next time I make it I will add a 1/4 cup of applesauce and it should be a real winner. The taste was good, I added 1 cup of Splenda, 1/8tsp. Cardamom spice and a 1/4 cup of raisins. The cut piece fit perfectly into a snack bag and the bread freezes well. I didn't have Granny Smith apples and used 2 Red Delicious apples but it was still good. I'll be making it again.

Apple Spice Bread

A mixture of white and whole wheat flour adds fiber to this tasty quick bread. This recipe freezes well.

Ingredients:

Cooking spray
2 medium Granny Smith apples (about 2 cups)
3 Tbsp. fresh lemon juice
1 cup all-purpose flour
1 cup whole wheat flour
2 tsp. baking powder
1 1/2 tsp. ground cinnamon
1/2 tsp. allspice
1/4 tsp. salt
3/4 cup packed light brown sugar
3 Tbsp. canola oil
1 egg, lightly beaten
1 tsp. vanilla extract
Pinch of nutmeg (optional)

Instructions:

Preheat oven to 350 degrees. Coat 9-inch loaf pan with cooking spray. Peel and grate apples. Toss with lemon juice to prevent browning.
In large bowl, combine flours, baking powder, cinnamon, allspice and salt. Mix well. Make well in center and set aside.

In medium bowl, combine apples, brown sugar, canola oil, egg and vanilla. Mix well. Add mixture to dry ingredients and mix until just blended. Transfer batter to prepared pan.

Bake 1 hour, until wooden pick inserted near center come out almost clean (to preserve moistness). Cool in pan on wire rack, 10 minutes. Remove from pan and cool completely.

Nutritional Information: Makes 10 servings. Per serving: 206 calories, 38 g carbohydrates, 2 g dietary fiber, 5 g total fat (<1 g saturated fat), 4 g protein, 170 mg sodium.
