Jerk Chicken & Greens (spicy)

4 Boneless chicken breasts
"Wet" Jamaican Jerk Sauce (in the BBQ aisle at the grocery store, good brand is "Mark's"
1-2 tablespoons of olive oil
tabasco sauce
"Pickapepper Sauce" - also on BBQ aisle (optional)
soy sauce

put raw and/or frozen chicken in a large ziplock baggie. Add 1 cup of the jerk sauce, the olive oil, tabasco to taste, 1-2 tablespoons of pickapepper sauce (if you can find this at the store...I HIGHLY recommend it for everything from chicken to fish), and 1 tablespoon of soy sauce. Close baggie and shake carefully. Refrigerate for 1-2 days. Remove chicken and grill on medium/low heat - turning and basting constantly to keep the chicken juicy.

Now...the greens. Steam (1" of water in the pot) collard, mustard greens, kale, spinach, whatever...in a large pot for about 2 hours. Add mild vinegar during steaming.

Drain and serve greens with chicken...its delicious!! Especially if you are like me and LOVE spicy food!!!

Note: The Jerk Sauce and Pickapepper sauce are VERY low in sugar...
