I started to have taco salad to, but went with meatloaf.. Taco salad sounds good for tomorrow...
I make my meatloaf with hamburger meat, raw eggs, onions and use sugar free ketchup on top...I don't use any fillers like crackers, to me they are not needed anyway the eggs holds it all together.. very good.. tastes just the same as the way I used to make it..

Awesome, i'll have to try it without crackers, I usually use ritz but didn't know the eggs hold it together.

I had the left overs last night... yummy the second day to.. you can add some sugar free ketchup in the mix to, it adds more flavor if you can have a few more carbs.. Heinz 75% less sugar is what I used, its 1 carb a tbsp. regular ketchup is 5 carbs a tbsp... you will have shrinkage of course.

On occasion I take the basic low carb meatloaf recipe, add some Italian seasoning, and make meatballs. Brown them in a bit of olive oil, drain, simmer in Patsy's Vodka Sauce (5 net carbs per 1/2 cup), serve in a bowl with Monterey jack cheese melted on top. To die for!

That sounds yummy susiekay.. I'll have to try them sometime...
I think I will have me a taco salad for supper tonight, hubby can have a sloppy joe and chips.. I been up since 1 am this morning, I had to open the store.. something quick...

1 slice homemade meatloaf no crackers, sf ketchup, no onions
1 cup vegetable medley
1 small bowl of fresh strawberries with 2 tbsp Redi Whip

Been doing this for a little over two weeks. Told hubby that he would also be eating this way, since I didn't want to fix two kinds of food each day. He objected a little. Since we started he has lost almost 10 lbs., and has loved the food! Now he is helping me plan Atkins meals! Bless his heart!

That sounds great susiekay.. congrats on his 10 lb loss ...My hubby has to eat the way I do to most of the time.. I sure wish he would help me plan meals.. lol He is on the skinny side, he can eat anything and never gain a pound.. I had hamburger steak and deviled eggs and celery sticks tonight and I bought him one of those small packs of lasagna at walmart for 2.50...I don't care for pastas anyway, but he loves them.. at least hes easy to cook for...
