Arrow ~ Recipes ~ (merged)

This looks complicated, but it isn't. And when I started making it with lemon soda and lemon jello, it's even better! You really gotta try this - YUM!

Dreamsicle Cake
(3 Weight Watcher points per serving)

-for cake-
1 Duncan Heinz Classic White cake mix
2 egg whites
1 can diet orange soda (Slice, Sunkist, etc.)

-for filling-
1 sm. pkg. orange flavor sugar free Jello
1 cup hot water
1 cup cold water

-for frosting-
1 sm. pkg. orange flavor sugar free Jello
1 sm. pkg. INSTANT fat free, sugar free vanilla pudding
1 cup 2% milk
1 tsp. vanilla
8 oz. tub Cool Whip Free topping

Preheat oven to 350 degrees. Spray 9x13 shiny cake pan with Pam. Mix dry cake mix with orange soda and egg whites. Blend 30 seconds until moistened and then 2 minutes on medium speed. Pour batter into pan and bake 30-33 minutes, or until done in center.

Mix 1 pkg. orange jello powder with hot water until dissolved. Add cold water and stir. Poke holes in cake with fork that the tines have been sprayed with Pam. Pour orange mixture evenly over cake. Refrigerate at least 2 hours.

For frosting, mix together the second dry orange jello mix and the dry vanilla pudding mix. Then add milk and vanilla, Blend well with mixer. Gently fold in the Cool Whip. Spread on COLD cake. Keep refrigerated.

Your family will not know this is a points-friendly recipe!

1/2 cup oil
2 eggs
1 large jar meat flavored baby food
2 Tablespoons vanilla
2 1/2 cups wheat flour
3/4 cup white flour

Preheat oven to 400. Mix liquid ingredinets together. Combine dry ingredients in large bowl. Pour wet ingredients into dry ones, mix with mixer until smooth. Add more flour if dough is too wet. Roll into a large ball and place it on floured waxed paper. Roll or pat into a 1/4 - 1/2 " thickness. Cut with cookie cutters and place on ungreased cookie sheet. Bake for 20 minutes. Turn off oven and leave in oven for 1 hour.

Default Apple Butter #1

2 quarts cooked apple pulp
4 cups sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves

Press apple pulp through sieve or food mill. Add sugar and spices. Cook until the flavors are well blended, about 15 minutes. To prevent sticking, stir frequently as mixture thickens. If too thick add a small amount of water for desired consistency. Pour, hot, into hot canning jars, leaving 1/4 inch head space. Adjust caps. Process 10 minutes in boiling water bath at simmering temperature. When cool, test for seal.

Default Apple Butter #2

For an easier recipe, use apple pulp as in above recipe. Omit the sugar and use honey instead. This will take some tasting because I just add honey, cinnamon and cloves as needed or desired for taste. Cook in a heavy pot in a 350 degree oven until desired consistency. Can as directed in previous recipe.

Angry

This soup is always requested by both James and Jhanai when it's cold out. Or when they don't feel good. It's not exactly weight friendly, but it's good!

Hodge Podge Soup

1 1/2lbs Hamburger
3/4 C. chopped onion
1 clove garlic
1/2 tsp. Oregano
2 T. Worceister sauce
1 or 1/2 C chopped celery
3 cans minestrone soup
1 large can pork&beans
3 C. water

Brown the hamburger w/the onion, celery, and garlic.

Add that to the rest of the ingrediants in pot and let simmer for an hour, stirring occasionally.

If you want it more brothy,,add more water.

Enjoy!!

Thanks for the recipe Marti, sounds yummy! I definitely will be trying this one. I love soup in the winter time!

Question~Do you drain the pork and beans?

No. It all goes in the pot. James even requested making again tonight!
Oh, and instead of adding water with a measuring cup, I just use the can from the minestrone soup, cleans them out that way!!
Hope you like it, let me know.

Amish Chicken Noodle Soup

1 whole fryer chicken, cut up OR chicken pieces with the skin ON
3/4 cup chopped onion
3/4 cup sliced celery
1 1/2 teaspoon salt
1/4 teaspoon pepper
5 quarts water
12 oz. noodles

In a large soup pot, cook everything except the noodles until chicken is done, about 1 - 1 1/2 hours. Remove, debone and cut up chicken, then return meat only to the pot. Return broth to a boil, add noodles and cook until they are tender. Serve and enjoy!

If you make this a day ahead, do not add the noodles until about 1/2 hour before dinnertime, or they will absorb too much of the broth.

Smile Some more Good low-fat recipes

I felt like sharing a couple great recipes that I have had for five years from my weight watchers packets and just recently made. I have no idea what I was waiting for, but I have had all the material you need for that program so I start up again when I need to. Anywho, enough yapping and more recipe sharing.

undefined
Garden vegetable soup
2/3 Cup sliced carrot
1/2-Cup diced onion
2 garlic cloves, minced
3 Cups broth( chicken, beef, or vegetable ) I use four cups of chicken 98% fat free kind)
1-1/2 Cups diced green cabbage
1/2 cup green beans ( fresh is the best)
1 Tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 Cup diced zucchini

1. In a large saucepan, sprayed with non-stick cooking spray, saute carrot, onion, and garlic over low heat until softened, about 5 minutes.
2. Add broth, cabbage, beans, tomato paste, basil, oregano and salt: bring to a boil. Lower heat and simmer, covered, about 15 minutes or until beans are tender.
3. Stir in zucchini and heat 3-4 minutes. Serve hot.
( I usually put in more of the veggies that I like than what the recipes calls for as well as more broth)

Banana Pudding Pops
1 envelope ( 4( 1/2 cup) servings) fat free instant vanilla or banana pudding mix
Skim milk to satisfiy the amount on the package of pudding, usually 2 or 3 Cups
2 Bananas, peeled: each cut into 4 chunks or so

1. Prepare pudding with milk, following package directions.
2.Insert 1 ice cream stick into each banana chunk; place each in 1 ( 5oz) plastic drinking cup.
3. Pour prepared pudding into cups, filling each two-thirds full. Freeze until firm, at least four hours.

The garden veggie soup has no points in the Weight Watchers Plan, so you could eat it all day, gallons at a time if you wanted. The pudding pops could be varied with different fat free mixes and are addictive and make you feel like you are eating a sinful dessert. Hope all you like these recipes that try them. I am a huge cook and am always inventing recipes and trying new stuff out.
