I've tried a lot of gluten free flours and flour blends, including soy, because I'm sensitive or allergic to wheat.
I only like soy flour when blended with other gluten-free flours. I find it a tad bitter on its own.
I like coconut and other bean (fava or garbanzo) flours better.
