Chicks up for a Challenge - 1 Week Salad Challenge - Starting Friday, 5/17

I'm not sure if theere would be any interest in this, but please let me know if you'd like to join me. Last year I did an AWESOME 1 month salad challenge where I literally ate Salad 3 meals a day, and two snacks of either veggies or fruit. I allowed myself 1 non-salad meal a day. Not only did I feel great, but it helped me to come up with new and interesting meal ideas, plus really increased my veggie intake.

This coming Friday, 5/17, I am going to do a 1 week Salad challenge. The challenge will end on the Saturday of Memorial Weekend.

The definition of Salad for this challenge is anything over lettuce/spinach/leafy green stuff.

I have some personal rules that I apply to myself: Minimal Cheese and no bread. Also, I use minimal dressing, or at least get it on the side.

An example meal plan would be:

Breakfast: Spinach salad, w/ basil, 2 soft boiled eggs, bacon bits, and a little bit of feta cheese.
Snack: Apple & a Banana
Lunch: Spring mix salad with tuna, avocado, and any other veggies I'd like.
Snack: Carrots & Cucumber
Dinner: Chicken Fajita Salad - Sauteed Chicken, Onions, Bell Peppers, Mushrooms all over lettuce w/optional cheddar cheese. Really no dressing needed on this one.


If there is any interest in joining me for 1 week of eating all salads, let me know! If not I'll just update on my regular threads. Also, you don't have to do it for a full week, maybe it is just 1 day you want to try it.

PS I will still drink beer in the evenings, however! Beer and salads. Yum.

I concede already and yield to your salad supremacy! I eat a salad every day for lunch, and sometimes for dinner. But it would have never occurred to me to have a breakfast salad.

What type of dressing does one put on a breakfast salad? Beside the inclusion of the egg, is there anything different about it - other than the time you're eating it?

Yay! So glad to have so much company! Welcome, and please everyone, share recipes if you have a good one.

joefla70 - If you use soft boiled eggs, the yellow is still runny and you don't really need dressing IMO. To soft boil and egg you put the egg in the water, on the stove top, and turn it on for 10 minutes. You don't boil it for ten minutes, but leave it on the stove for 10. Hope that makes sense. Otherwise anything will do.

Another one of my favorite breakfast salads that gives me lots of good carb energy for the gym is Quinoa, sweet potatoes, onions, and green beans over spinach. Plenty of protein there and the sweet potatoes give me a boost. I sautee them before putting them in the salad. It is good cold as well as warm.

This sounds pretty awesome to me. I might start it a day or two early actually though. My husband's birthday is on the 23rd and we're going out for a fancy dinner, and I'm not giving up my prime rib dinner.

I get that Canadian Cutie. Really this doesn't even have to be a week. I think it could be beneficial doing it for one day even. I am definitely going to allow myself my 'post hike' meal, that will surely include a soda and I think this week an ice cream cone. :)

I do small fruit salads in the morning alongside. Can't stomach much fruit in a salad lunch, but seems to work for brekkie.

Wow, this sosunds awesome. I am a newbie but this def sounds like a challenge I can handle this seeing that I eat salads for lunch and dinner anyway. Well they key to success here for me will be preparation so off to find some great receipes..I will def share :)

Yay! Welcome dunsready! I try to keep some spinach in little baggies, as well as tons of veggies. That way if I don't have time to really make a salad I can just throw all that together really quickly.

No problem Novus! I'm just starting it today because it will give me one full week until Memorial day weekend when I'm going camping. Mondays are usually an easier start for me too.



SO...I hope if there is anyone else starting with me today that you are pumped and excited! I know I am :) I was so tired last night, but I forced myself to get some salads ready, though they are pretty basic.

Here is the plan/breakdown for today:

Breakfast: Spinach Spring Mix, Feta Cheese, Walnuts, Strawberries
Snacks: Apple, Carrots, Banana
Lunch: Spinach Spring Mix, 1/2 Avocado, Tuna in Water
Dinner: Spaghetti Squash, Yellow Squash, Zuchinni, Asparagus, Onion, Garlic mixed with a little bit of pesto on top of Spinach! Yum!!!!

Well, I had a boiled egg, smoken salmon, slice of ham, onion, tomato and a fruit salad for breakfast.

And a chicken salad for lunch.

I don't eat dinner. I sink beer and/or red wine instead.

Hope everyone had a great weekend! I did, and stuck to the salad challenge pretty well. As mentioned in my initial post, I did have 1 non-salad meal after my hike Saturday, but I still kept it full of veggies and healthy.

Some Salad Highlights from this weekend were:

My Spaghettie Squash salad w/yellow squash, zuchinni, onions, asparagus and pesto. I WILL b emaking this over and over again, and I brought leftovers today. Josh (my boyfriend) absolutely loved this.

Then last night I made chicken, avocado, mango salsa over lettuce. Was pretty yummy as well! i could see that being good on bread too.


TODAY'S PLAN:

Breakfast: Fruit Salad
Snack: 1/2 Cliff Bar, Coffee
Lunch: Leftover Spaghetti Squash Salad
Dinner: Beef Patty, Sweet Potato/Onion, & A1 Salad...MMMMmmmmm!

Last night I had lettuce, red cabbage, cabbage, green peppers, cucumbers, celery, cheddar cheese and 3 oz of taco meat. I really had the taco meat wrapped in lettuce and then ate everything else. It was amazing!

ETA: This chicken salad was phenomenal! Absolutely delish! I've made the Peperoncini Chopped Salad before; it's one of my favorite basic salads and is good with just about any protein added. My opinion of the Broccoli Slaw with Shrimp was kinna 'meh' - the flavors didn't work well together, or something.

Sorry, had a sick kid yesterday so I wasn't able to login and give an update.

Totally cheated last night and had pizza, blah! SO did not taste as good as all my yummy salads.

I need to look up a yummy salad for toinght though to make sure I get my system cleansed after my cheat. I think I pinned one from Novus that was shrimp, avocado, and mango? I have everything but the magno, so i need to stop by the store and get that :) Mmmmmm, making me hungry!

Keep up the good work everyone who is still in it! I promise I'm still here, thought I only have two days left (Friday is my 1 week mark.)

Glad to see there are still some Salad Freaks about! :D This has been the perfect week for salads....the weather is crazy hot, especially for May.

The shrimp/mango salad sounds yum, 100, but it wasn't my pin. Mangos are so difficult for me to buy - they're expensive and never seem to ripen properly - so I try to ignore recipes with them. ;) Hope your sick kid is feeling better.
