2 bags Skinny Dip Angel Hair
1 egg, lightly beaten
4 thin slices bacon, diced
1/4 cup grated Parmesan
1/2 medium onion, diced
1/8 cup white wine
2 cloves garlic, minced
1/4 teaspoon salt
2 teaspoons olive oil
1/8 teaspoon pepper
Stir together egg, Parmesan, salt and pepper and set aside. Cook bacon in a nonstick skillet until crispy and drain on paper towels. Leave 2 tablespoons of bacon fat in the pan and add olive oil. Add onion and cook until soft. Add garlic and wine and cook 1 minute.
Rinse noodles and add to skillet. Stir in egg mixture and bacon and toss to coat. Heat 5 minutes and garnish with parsley and extra Parmesan, if desired.
