Default New Favourite Veggie - Celery Root (celeriac)

New favourite vegetable - celery root a.k.a. celeriac. Had it for the first time last night and, boy, was it really good. This is even closer to a "potato" than cauliflower mash!!! It is not a very attractive vegetable but once you peel it...dice it and boil it....it is awesome!!! And.....it's an UNRESTRICTIVE veggie!!!!!

I had been using half rutabaga and half cauliflower for a mash. But now I will also try using half rutabaga and half celery root to see how that tastes!!!

I love celeriac... It can also be eaten raw... celeriac remoulade is a classic French dish... Could probably be made IP friendly with one of the WF salad dressings...

If anyone has recipes please post. It think that this could be a versatile veggie and would be nterested to see what others do with it.

I make them sometimes as fries and my family loved them even more than French potato fries and last time I made them into chips but they took like an eternity to get crispy, but if you have time, they are worth it! So yummy.

This one's been on my list to try for a while - I think once the storm blows over I'll pick some up! I love that there are so many healthy alternatives to potato, it means that I won't have to give up my "starches" in phase 4, they will just be made from something other than a tater
