Default Zucchini!

Hi guys n gals.

I am headed off to see a movie ("Mama," for those curious). I want to make a small dinner using Zucchini when I get home but I can't seem to find a good one that does not require breading them.

Any suggestions? I figure if I let this sit a few hours one of you guys might be able to suggest something before I am home.

Someone in another post suggested (to another member) something like zucchini spears with a touch of olive-oil and a sprinkle of cheese and it sounded great. I am looking to not go over 200 calories for this one (big lunch).

So guys, any suggestions?

I just cut them up and saute them for a few minutes in a teaspoon of olive oil in a nonstick pan.

You can grate one, mix with an egg, add some salt and pepper, then cook it up as little fritters or pancakes. Adds some protein and it has a really great flavor.

Oh, good ideas! I forgot to mention I was thinking about baking them versus frying (that's why a lot of the stuff I was looking at required baking).

maybe slicing them and letting them cook with a little bit of butter on them with a small amount of veggies on the side. Haha I had a decent amount of protein today so I am not too worried.

However those pancakes sound pretty sweet. Do they keep well? I might make a few and save them for my mornings.

Hm... you know, I've never tried making them in advance (I eat them too quick, lol). I think they might get watery from the salt, so maybe try omitting that? Or you could drain the zucchini on paper towels or something first, that would probably help, too.

Hmm maybe I'll experiment when I have a little more money to do so. If they fry quickly maybe I'll just grate them in advance and then whoop e together quick in the morning. Its just because I only give myself an hour to get ready for work.

I just grill them with some sea salt sprinkled over them. They come out yummy that way and I like to use them for paninis or with my poached eggs in the morning. They're also very yummy for snacks too!

I slice them up and bake them with a little dab of pizza sause on them.

For some reason, other than whole I have been avoiding tomatoes (like sauces and such). But that does not sound that bad. Unfortunately, I got home so late I just went to bed. But I plan on using some of these ideas tonight instead.

Thick sliced on the outdoor grill! Love them this way. I like when they get a slight crispy char on the edges. Good stuff! I want to do this with sweet potatoes.

Super simple is to just slice the zuch in half length-wise, lay out on a baking sheet, lightly coat with olive oil and then salt, pepper and if you want a little paremesan cheese and bake until the zuch is cooked.

I also like to cube zuch with other vegetables, coat all in olive oil and spices and bake.

My favorite is peeling the entire zucchini to create "noodles" then saute with a bit of adobo, and add some tomato sauce and some Neufchatel cheese to make a creamy tomato sauce. It's delicious.
