Default Veggies and a toaster oven???

Has anyone mastered the art of roasting veggies in a toaster oven? if so how did you do it?

I'm sure it could be done, as long as your toaster oven goes up to 400 degrees or higher! That's the oven temperature I use for most roasting!

it goes up to 450...how long would you say i should keep it in there? I was thinking about roasting some bell peppers and zucchini

We roast asparagus in the toaster over - 400 for 20 minutes on bake. I've tried it on broil and they get a little too done on the tops.

I've done eggplant too - not as long tho - but it depends on the thickness of your slices.

Haven't tried other veggies.

We've been roasing mushrooms lately - so very yummy!!!

Times vary depending on the veggie. Asparagus only takes about 10-15 minutes. Broccoli and cauliflower are closer to 20-25 minutes, and rutabaga can take up to 40 minutes. I just watch for the browning

If you are a garlic fan (like me), roast them in "shell" but separated from the bulb. I usually roast my veggies (usually Zucchini, asparagus, bell peppers, mushrooms and garlic) for 20 minutes at 350 with a bit of EVOO and salt.
