I chop up (or shred) the head of cauliflower and then freeze it raw. That way I only need to grab out what I need for any given meal. It is so versatile!

My recipe isn't fine tuned but all I did was whip up an egg white, 1/4-1/2 tsp baking powder, tsp of SF salted caramel syrup and an IP milk chocolate pudding packet. I added water until it was the right consistency. Cooked at 350 degrees for about 10-12 minutes. It made 8 mini muffins. I need to write down what I do more so I can be more helpful. I am sure the recipe threads have pudding muffin recipes. I just added the SF syrup.
