Default Migas - TexMex Breakfast

Migas

Ingredients:

100% Egg Whites, 9 Tbsp

Mission (80 Cal) - 6" Yellow Corn Tortillas Extra Thin, 2 Tortillas

Pico De Gallo - Fresh (Tomato, Onion, Cilantro, etc), 4 Tbsp

Kraft - Natural Shredded Fat Free Cheddar Cheese, 1/4 Cup (28g)

Directions:

Spray a pan with PAM, heat on medium high.

Tear tortillas into bite size pieces, saute about 3 minutes. Set tortilla pieces aside.

Saute pico de gallo until onions are translucent, add tortilla pieces back.

Pour in egg whites and scramble with pico and tortillas.

When eggs are set to your liking, put on plate and top with cheese.

Enjoy.

This sounds really good. I'd definitely try this with some hot sauce on top too, heh. Thanks for sharing!

Yummy!

I often have egg whites for dinner! Great protein and low calories. I'm too cheap to use egg beaters, so I just use real eggs and give the yolks to my pets.

i usually buy the store brand 100% egg whites...i hate cracking eggs!
