Default Need Ideas How to use Egg Whites

Hi All:
I am looking for ideas on how to use 2 egg whites. Plan on using them 2-3 times a week.

I already use them to make a small omelet but lost on what other possibilities may exist!
Any ideas appreciated!

Make meringues using Splenda instead of sugar and eat them as a treat.

I hear folks use egg whites with their packets to make muffins...could fry them into sandwich like consistency and put veggies onto them and eat them that way.

Mmmm I like the meringue idea! I found this recipe online. Haven't tried them yet but I plan on it.

Quiche | San Francisco’s Ideal Protein Weight Loss Recipe


.5 cups liquid egg whites
1 whole egg
1.75 cups mushrooms
.25 cups green onions
.25 tsp sea salt
1 tsp EVOO
dash of black pepper
mrs. dash (i use the garlic and herb - salt/msg free)

heat oven to 350

chop mushrooms and green onions and add to a pan with 1tsp EVOO. cook covered on low until soft. remove lid, turn up heat and cook until the water evaporates.

in a mixing bowl, add .5 cups liquid egg whites with one whole egg and beat. add .25 tsp sea salt, a pinch of black pepper, and mrs. dash. add the cooked mushrooms and green onions to this mixture.

spray a small muffin pan with a light spray of olive oil. pour egg mixture into muffin pan, filling each cup about half way (should make about 5-6). place muffin pan in the oven and bake for about 30 min, or until egg is slightly browned on top and a toothpick comes out clean from the center.

Pancakes, muffins, flatbread, I use them to make all of this With the puddings and shakes, especially the puddings.

Also if you're not scared of eating raw eggs, then you could beat the egg whites until stiff and then add the pudding so you have a creamier, bigger amount of pudding

I make a braised celery in 'cream sauce' using egg whites: sautée garlic, lemon zest, & celery 5 minutes, then simmer in chicken stock and lemon juice for 10 minutes, I remove from heat, let it cool a little and add 2 egg whites and it makes a 'cream sauce' I have been missing. Make sure the liquid isn't too hot or else the egg whites will 'cook up'.

Oh, also you could add liquid egg whites (they are pasteurized in the carton) straight to your EAS shake. You could throw in strawberry EAS in a blender with ice & frozen rhubarb and some egg whites for protein boost in your smoothie and also get some veggies... Or any flavor shake. I have been on a frozen rhubarb smoothie kick lately with the IP wild berry yogurt.
