....i decided to make one location for my recipes so i can keep up with them :)

whats on the menu today?? HOMEMADE MAYONNAISE and ROASTED RED PEPPER CRAB CAKES
using 1/2 of 1 IP Potato Puree Packet

ok so i have been wanting some crab cakes!!! i thought i had read somewhere on the IP treads that someone made crab cakes using the potato puree...but i could not find it....so i asked several people, and they never heard of it, so i decided i must have dreamt it!!! so i thought heck, why not....try to make some anyway!!! how hard can it be right???

first off let me say i have never in my life made homemade mayonnaise!!...that is until....today!! OMG....how easy was that!!! i will never buy store bought mayo again!!!

it was super easy to make using my little magic bullet!! its thick, creamy and best of all, all natural!!! here is the simple recipe!!

1 large egg white
1/2 tsp egg yolk (this is about 1/4 of an egg yolk)
2 TBSP Light Olive Oil NOT evoo
2 tsp lemon juice
1/2 tsp yellow mustard
1/8 tsp sea salt

Use the flat blade blender of your Magic Bullet. Add in the egg white, the yolk, 1 TBSP oil, the lemon juice, mustard and salt...remember to only add 1 tbsp oil at this time.
Pulse quickly for 4-5 short pulses...and you will see it start to whiten and come together, then pulse for 10 secs....wait a few seconds and pulse again for 10 secs.....then add your last TBSP oil, and repeat above....pulsing for only 10 seconds at a time, until thick and creamy!!!! AMAZING!!!!!!!! you now have mayo!!! if you like sweet mayo like miracle whip you can add some stevia or splenda to taste but i did not.

this made 6 TBSP mayo...which can keep in the fridge in an air tight container for 2 weeks.

ROASTED RED PEPPER CRAB CAKES

INGREDIENTS:

1 Can Sea Fare White Lump Crab Meat
(or your crab meat of choice)
1 TBSP Homemade Mayo
1/2 Packet of IP Potato Puree
Old Bay seasoning to taste
1 tsp Gourmet Garlic from tube
1 tsp Gourmet Chili Pepper from Tube
1 tsp dried shallots
1 TBSP Roasted Red Peppers Diced
chives, parsley, salt and pepper to taste

measure out 15 G of the IP potato Puree Packet (half)
disregard my "11" on the scale...as my scale is off a bit!! haha

DRAIN your crab meat and dump into bowl....add your seasonings...spice it up!!!

add the old bay seasoning to taste...yum....i added a lot!!

mix GENTLY...folding over carefully to keep your lumps of crab meat in nice chunks...cause its good that way, don't ya know???

heat a non-stick skillet over medium heat and spray using a MISTO one spray of olive oil into 4 small circles...

divide your mixture into 4 equal patties...don't smush 'em down now....leave 'em tall and full!! :D

sear in the pan until browned, then turn over and sear the other side!!
ooooooweeeeee...smells good!!

now you are ready to plate your delicious crab cakes...
i used a soft bed of butter lettuce, but you can fix it any way you'd like!!

JUST LOOK AT THAT THICK YUMMMY CRAB CAKE!!!

sometimes the best dishes come from "scrapping the barrel" when there's nothing left at the end of the week to cook!! haha

i know lots of IPeeps have made the cauliflower rice....however, instead of grating it...which is what i was going to do, as i was getting my box grater out of the drawer, i saw my old cheese grater....you know the kind....like they have at olive garden when they come around asking if you want cheese....with everything!! but i digress....anyway, i thought hmmmm....so i popped in a few small pieces of cauliflower and churned away...and into the bowl dropped the most perfect tiny pieces of cauliflower...very tiny almost grits size....(hmmmm cauliflower grits....another day).....it was like tiny rice!!

so i heated the pan...and used 1/2 tsp coconut oil....and added all the cauliflower and sauteed until lightly browned in a very dry pan...didn't add any other thing except salt and pepper...and OMWORD.....IT TASTED LIKE COCONUT RICE or toasted coconut vermicelli!!!!!

i got so excited i forgot to take pics of the ham and peppers sauteing in the other pan!! hahaha but i sauteed some red and orange mini bell peppers sliced and some green onions in a pan with 4 oz. diced ham...once lightly browned i de-glazed the pan with about 1/4 cup 0/0/0 chicken broth. in the end, i plated it on each side, but ate it mixed!! i topped it with some fresh parsley and thyme from my herb garden!! whooop whoooop!!! YUM!!!!!!!!!!!!! i love it when i make something soooo good for me that tastes sooooooo delicious!!!

so i made it again, and took some photos of the ham and peppers and green onions in the pan!! it was just as good as before!! this is a keeper recipe!!!!

another successful day in rainbowsmiles IP test kitchen!!! :D

using the IP crepe mix, i made a delicious tostada!!!
the package made two 6 inch tostadas!!!
with just 1 crepe mix!! woot woot!! and OMJOLLYGOODNESS....it was gooood!!!

trust me...that crunchy toasty tostada is under all that
delicious goodness piled on top!!

i started by making the crepe mix...from a recipe i got from here:

Ideal Protein Pita Wedges/Crackers/Pizza Crust

Ingredients:

1 Package of IP Crepe Mix
4 Tbsp lukewarm water
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp red pepper flakes
sea salt
1/2 tsp parmesan cheese

Mix crepe mix with water so it is thick add herbs & spices of choosing.

Spread thinly on cookie sheet and sprinkle sea salt over the top

Bake 350 degrees until edges are brown & crispy.

Remove from oven & spray top with pam & sprinkle with parmesan cheese. Put back in oven for a couple minutes until cheese is golden brown.

Cut in to wedges to make pita chips or use as a thin crust pizza.

here are my tostadas!! i made 2 nice round ones!!!

my 2 oz of milk for the day, i chose to add
1 TBSP VEGGIE SHREDS....that is NOT IP protocol,
so you can just omit it!! but for me,
i will have it occasionally in the place of my milk.

IT WAS SCRUMPTIOUS!!!!!!!!!!!!!!!

1 zucchini, sliced
1 cucumber, peeled, seeded and drained
3 ribs celery, sliced
1 mini orange bell pepper
1 green onion, sliced
1 garlic cloves, sliced
1.5 cups chicken broth
Fresh herbs: parsley, dill, thyme
salt and pepper to taste
dash red pepper flakes
2 oz milk (optional)

cooking instructions:

Heat zucchini, cucumber, celery, orange bell pepper, green onion, garlic and herbs in broth until soft and the liquid is reduced. Puree veggies in batches in a blender or magic bullet until smooth. Add back to the pot and Stir in milk and salt and pepper to taste. 1 Generous serving of goodness!!!

4 ounces large cooked shrimp, peeled
1/3 English cucumber, halved lengthwise, seeded and medium sliced
1 large celery stalks, sliced thin
1 red onion ring diced
2 oz plain greek yogurt (this instead of your 2 oz milk allotment)
you can omit this if you want!!
2 TBSP WF mayonnaise or 1 TBSP Homemade Mayo!!!!
1 tablespoons freshly squeezed lime or lemon juice
1 teaspoon curry powder
salt and pepper to taste


In a medium bowl, combine yogurt, mayonnaise, lime juice, curry powder and salt.
Add shrimp, celery, cucumbers and mix. Refrigerate until ready to serve.

Have you tried the recipe without parmesan cheese? I'm in phase 1 and don't think I can have cheese. Just wondering if it would still turn out good...it does look very good!

you can easily omit the parmesan cheese, but i am on phase 1 and its only 1/2 teaspoon so its not that much, and even on the IP web page of recipes they do occasionally use other ingredients sparingly. just talk with your coach if you want to add it, and if not, omit it :)

Raspberry Ginger Mint Julep

blend 1 cup ice, 1 cup water,
1 tbsp torani raspberry syrup
(sometimes coconut, peach or strawberry),
tons of different torani SF flavors!!....
1 tsp of the gourmet ginger in the tube
and 1 fresh mint leaf in the blender...
and its nice and refreshing!!! quick and easy.




Southern Shrimp and Grits

4 oz cooked shrimp
1 tomatillo
creole seasoning or old bay seasoning
1/3 head cauliflower riced
veggies of your choice for veggie sauce
colored bell peppers and fresh parsley for garnish

make your creole veggie sauce...

simmer veggies in a pan with 1 cup low sodium no fat chicken broth...this is a GREAT way to use up bits of leftover veggies...i used some shredded cabbage, 1 green onion, a piece of zucchini, some mini bell peppers, a few cauliflower florets, some roasted red pepper, 1 celery stalk, a few radishes, and some jalapenos and red pepper flakes cause i like it spicy!!! just about any veggie will work!!

then scoop out your veggies onto a plate to cool....try not to eat them all...because they are sooo good even just like this!!! reserve the "veggie broth" for thinning out sauce if needed

after cooled, puree the veggies in a blender and add more seasonings of your choice...like a dash of hot sauce and more creole seasoning!!! use a little reserved veggie broth as needed to make it a medium thick sauce. omg i can just eat this whole bowl just like this!!!!!!! so good!!! set aside and prepare cauli-"grits"

saute cauliflower rice (i grate mine in a cheese grater) in a rather dry pan to toast....sprinkling with creole seasoning....set aside

saute the shrimp and diced tomatillo in some creole seasoning....i used Tony Chacheres Original Creole Seasoning

then pour in your veggie sauce!!! oooh my!!!

plate your cauli-grits....top with shrimp and sauce and garnish with sliced colored peppers, parsley and a dash hot sauce!!!!!!!!

i made a smaller version, used basil instead of dill and added fresh lemon zest!!! HOW DIVINE!!! i also only used half the amount of oil!!

below is the original recipe...

Ingredients


3 medium yellow or green zucchini

Kosher salt

... 2 Large Cucumbers

1/2 small red onion

1 - 2 cups torn leaf lettuce

3 tablespoons lemon juice

1/4 cup olive oil

2 tablespoons snipped fresh dill
Freshly ground black pepper (optional)


Directions

1. With a vegetable peeler or mandolin shave zucchini in thin strips. Salt lightly, then transfer to colander to drain, about 15 minutes. Meanwhile, shave cucumbers in strips and thinly slice onion.

2. Rinse zucchini and drain in colander. To assemble salad, in a 2-quart square dish layer one-third each of zucchini, lettuce cucumbers, and onion. For dressing, in a glass measuring cup whisk together lemon juice and oil. Drizzle some of the dressing on layered vegetables. Repeat layering and dressing twice. Cover and refrigerate 1 hour or up to 12 hours before serving.
3. To serve, sprinkle salad with fresh dill and pepper. Cut salad in rectangles with a sharp knife; lift out with a spatula.

i covered it in plastic wrap, pressing down to seal it well and to compress all the veggies and put into the fridge for several hours!!

**** it is even better the next day, and is still delish 4 days later!!! Each time i had some I would drain off any liquid that had gathered in the bottom and I think this kept it fresher longer and kept the veggies all crisp!!

Once I decided to stick in some toothpicks and have mini veggie stackers...i topped them with a tiny piece of orange tomato!!

i called them....SUMMER SNACKER STACKERS!!!

i didn't need anything to press on it, it all held together just fine and was easy to slice and serve. i put toothpicks in the snacker stackers because they were cut about 1.5 inches by 1.5 inches, so they all came apart without a pick. But serving a regular serving was just fine for me.

1/8 cup rolled oats
1/4 tsp sea salt
sprinkle cinnamon to taste
1 tsp baking powder

one egg white, slightly whipped
1 tsp vanilla
1 tbsp almond roca SF syrup
* If needed…enough water to get a cookie dough texture (i used 1/2 cup)

Toss rhubarb with stevia to coat and let sit while making the cookie batter.

Combine dry ingredients. Once all dry ingredients have been well mixed stir in the egg white, vanilla, almond roca syrup and rhubarb pieces and any juices from the rhubarb.
then add water to get cookie dough texture. i ended up using 1/2 cup water.

Spray your cookie sheet pan lightly olive oil Pam spray and place 12 cookies on sheet. I rolled them into little balls and then flattened them slightly using my fingertips...i dipped my fingertips into water to keep them from sticking to the cookie dough!!

Bake at 325 for 5-10 minutes or desired degree of moisture. Test center of cookie with toothpick to see if baked.
Allow cookies to cool slightly on the pan before transferring to a wire rack to cool completely.

Ingredients:
1 IP Crepe Mix OR Potato Puree Mix
1/4 Tsp Baking powder ( i used 1/2 tsp)
I added 1/4 tsp Crushed Rosemary
1/2 Tbsp Oil (I use Olive Oil)
1 dash salt (to taste)
1 oz skim milk (from morning allowance) (i used 2 tbsp)
Water (just enough to make it a thick but pour-able batter) (i used 6 tbsp)

Whisk together dry ingredients.
Add oil and mix in until it starts to form crumbles.
Add milk and mix well (it will become a doughy batter at this point)
add enough water so that it is thick but able to be poured.

Let it sit a few minutes to thicken.

Spray a nonstick pan with Pam and spray inside your English muffin rings also.
(Note: If you don't have English Muffin rings a small empty tuna can with the label, top and bottom removed can be used also, this recipe can make one big bun that you can slice into two smaller buns or you can make two smaller buns. I find it easier to make one big one usually because making sure I split the batter evenly is a pain.)

Put your pan with the muffin rings on the stove and get it nice and hot then pour your batter into the rings. You really don't have to fill them much more than half way. This will make the bottoms nice and crisp. once it has cooked and gotten a nice crispy bottom you can either transfer them to a cookie sheet and bake them the rest of the way or you can flip them over and finish them in the pan. The oven method tends to make them fluffier but when I am hungry enough after work I just flip them and keep it moving. You can add any seasonings you see fit (I am partial to rosemary) but you may want to up the amount of baking powder if you do.

I did mine in the skillet as above....cooked on medium heat for about 3 mins, then I just slipped my spatula under the entire ring and flipped carefully!! cooked on the other side about 3-4 mins. I let it cool on the rack for about 5 mins...that was as long as i could stand as I wanted to SEE the inside!! haha

then i toasted each half in the toaster on bagel setting, so to only toast the (insides) one side that was not already toasted!! Sprayed with a wee bit of ICBINB spray and then topped with WF Raspberry Jam....I had to stop eating to make a photo!!! You are LUCKY to get this photo!! hahaha YES!!! IT WAS THAT DELICIOUS!!!

i have no set recipe...its a vegetable puree....mostly its the same as the vegetables I use for the shrimp and grits sauce...see that post in this thread.

i just usually gather the bits and bobs and remnants of veggies and boil them in some water or light chicken broth until tender, and then puree them in the magic bullet.

i can add italian seasonings, like basil, oregano, etc for spaghetti sauce (my spaghetti being the spiral cut zucchini noodles)

i can add old bay seasonings etc for creole dishes... like shrimp and grits or crab cakes,

its especially great when you used roasted red peppers!!!

or, you can just eat it like it is with some hot sauce as thick soup...oohhhweee its GREAT!!

i had intended to use it as dipping sauce for the crab cakes, but oh my word, those crabs cakes were so good, they didn't need a thing except my mouth to gobble them down!! i have made them now every week!! :)

which dish are you talking about??
if it is the stacked summer salad, yellow squash ARE allowed, as are zucchini on phase 1, only winter type squash are not allowed, like butternut squash, acorn squash, etc...and the onions are NOT cooked, all the veggies in this recipe are raw and fresh.

still, the desire for a bun increased so i made the recipe for the "english muffin" only made it into a thinner version, making 2 muffins from the same recipe, and then sliced them in half through the center, then toasted them cut side down in a pan....and wow!!! hamburger buns!!!

I think YES.

I didn't like the crepe mix as a crepe & I was considering it as one of the many packets I was never going to purchase again, but now i'll probably stock up and use them to make sandwiches/buns ALL the TIME.

I'm only midway through my 3rd week - so although most cravings are gone (out of sight, out of mind) I still DO miss bread at times and this is a great substitute to satiate me while doing IP.

EVERYONE SHOULD TRY IT!!!

Crab Napoleon with “Fried” Green Tomatoes and Chunky “Mango” Salsa!!! Ohhhh YES!!!

Two slices of fried green tomatoes are alternated with layers of the heated crab mixture and then topped generously with chunky “mango” salsa.

Preheat oven to 400F.
Place a baking sheet in the oven for 5 minutes to get it plenty hot. I lined mine with a tiny piece of foil for easy cleanup. Spray with cooking spray.

Wash, peel and slice into 4 thick slices your beautiful GREEN TOMATO!!

You can make Crab Napoleons with them!!

1 Can Crab Meat of your choice…I used Crab Claw Meat
FRESH Herbs of choice, I used a tiny bit dill, some basil, chives and parsley all from my herb garden!!
Some finely diced red bell pepper or roasted red pepper
Zest of 1/2 Lime and 1 TBSP Lime Juice

1 TBSP Mango Drink mix
Mix the two and let the orange tomatoes soak up the Mango Drink for flavor

OMG that looks sooooooooooooooooooooooooo good. I never have to much luck with the pudding cakes etc. They turn out rubbery but I may have to try this.

I found a lot of recipes turned out rubbery too!! I research a LOT before coming up with a suitable recipe because I hate to waste a 4 dollar packet!! haha

I didn't like the crepe mix as a crepe & I was considering it as one of the many packets I was never going to purchase again, but now i'll probably stock up and use them to make sandwiches/buns ALL the TIME.

I'm only midway through my 3rd week - so although most cravings are gone (out of sight, out of mind) I still DO miss bread at times and this is a great substitute to satiate me while doing IP.

EVERYONE SHOULD TRY IT!!!

vovo...just wanted to give an update, when i made the "hamburger bun" they are like the "thins" you can buy at the store, and the recipe made 4 pieces, or 2 buns, so i put one bun in the fridge and the next evening i toasted it in the toaster and it was just as good as the day before!! Nice to know it kept in the fridge so I can make ahead of time!! woot woot!! i love IP!!!

the crepe mix is slowly becoming my very favorite packet!! as a carb addict, i love bread!! i don't CRAVE bread, i don't CRAVE anything on this protocol, still, i ENJOY the way i can make something suitable so that i don't "stand out" as dieting!! I can't wait until my next cookout when i can make a burger and bun and no one will notice i'm different hahaha after all, i am investing in my life!!

when I did IP the first time and had to phase off due to medical issues, I found that I gained some of my weight back, even though I did phase off. Now I know why!! When you are on the program, you do IP foods for Phases I and II, then start eating more "normal" foods as you do phases III and IV ... BUT, I never learned how to really cook the veggies!! I never went back to the sugars or junk carbs (fortunately!!) But I did go back to eating more fatty flavored foods.

I LOVE this site because I am learning more about cooking flavorful veggies (new fav ... coconut "rice"). The recipes here really make a meal more enjoyable (while staying OP!). I am hoping that the more I learn to cook "healthy" the better chance of maintaining my goal weight once I reach it.

I think this is where my clinic fell a bit behind before ... we never really had recipes offered. I am soooo grateful that my coach told me about 3FC this time ... I am really finding the support motivating!!

ya just gotta love that crepe mix....its so versatile!! i love comfort foods!!! comfort foods make me feel....well....like i have been hugged!!! it was a rainy day here, so this delicious serving surely hit the spot and made me feel all hugged and loved!! hahaha

i started by mixing 1/2 packet of potato puree and 1/2 packet of crepe mix packet!!
I added 1 tsp baking powder, dash salt and pepper, and 1 tbsp rosemary crushed to release the flavor!! mix this dry mixture all together.

then i added it into my magic bullet hopper...added 2 tbsp milk and 4 tbsp water and blended...it was thick!

it was so thick it stayed on the spoon when turned upside down!! it also thickens more as it sits a few minutes

i dropped spoonfuls into some chicken broth that had a very slight boil....don't boil too hard....just a soft boiling broth....and these cooked up fast....in just a minute or so!!

i used the broth from 1 chicken breast that i soft boiled until tender and then pulled apart.

the dumpling was very fluffy on the inside and moist on the outside

lunch time.....what to eat?? i wanted a lemon poppy seed bar and some tea....wasn't really hungry but i knew i needed to get in my 2 cups veggies...and i was out of kale...so alas, my favorite snack, kale chips was not an option!! so i went to see what veggies i have left at the end of the week....cabbage. so i got very creative!!

THANKSGIVING TURKEY AND HERB STUFFING

sliced turkey is amazing....i love turkey!!! and i love thanksgiving....a time for giving thanks...and this year i am going to be so thankful i stayed the course on IP by the time thanksgiving arrives and i will be ready!!! but when i think of thanksgiving....i immediately think of homemade stuffing!!! i love stuffing!! ok, i just love good food!! and being on IP means lots and lots of GOOD FOOD!!! so i came up with one awesome creation....IP HERB STUFFING!!!!

i started by making the awesome recipe for my IP English Muffin....scroll back in this thread to find that recipe!!

you will see bubbles start to form on the top...i cook for 3 mins on each side. then flip!!

slip a spatula under the entire ring and flip

let it cool while you make the other one!!

once they are cool....cut into bite size pieces

next, saute your chunks in a hot pan with just a little spray of ICBINB butter spray!!
these can be used as croutons....you can add some garlic powder, or chili powder, or any type of seasoning at this stage for croutons, or for one of my favorite dishes...panzanella!!! but for now, i am on a mission to make stuffing...so on i go!!

next....cut up 2 cups celery and 2 green onions and saute in a skillet.

once they are tender, add 1/2 cup chicken broth OR water to the celery and onions

let this cook for a few minutes until all the liquid has cooked out and the celery is tender

next add your spices....this is what i used...parsley, sage, rosemary, thyme, celery salt and paprika!!

mix well!!

then add in the bread stuffing!!

and then pour it all into a dish sprayed with non stick spray

spray the top with a few sprays if ICBINB butter spray and bake at 350 for 15-20 mins or until the top is nice and browned!!

well.....i did it....i cooked my first ever real fish!!! mahi mahi!! it was frozen and thawed....and only 135 calories for 4.5 ounces!!!! i have never made mahi mahi before....i have never made any fish that wasn't frozen fish sticks that were breaded!! i don't LIKE fish!! well...i didn't THINK i liked fish!! turns out I LOVE MAHI MAHI!!!!

so i looked on you tube how to cook mahi mahi and i have tried baked fish and didn't like it so i found a video for pan seared fish!! so that is what i did.

nothing fancy...just some salt and pepper and a MISTO spray of EVOO...a HOT pan and pan seared for 5 mins on each side....done!

so i made my delicious "mango" salsa!! its NOT really mangos because well, we know we cant have mangos!! but what i do is dice an orange tomato and soak it in 2 tbsp of the IP mango drink!!....and there ya go....faux MANGOS!!!

this is what else i used for my homemade hot salsa...

roasted red peppers, diced shallots, diced tomatillo, chili peppers, garlic, diced red tomato and lime zest and lime juice... i start with the shallots and then add the tomatillo, red peppers, chili peppers, garlic, and red tomatoes sauteing in a pan and then i add the lime zest and lime juice and sit aside while i make the fish....then i will heat it back up, and at the last minute, add the "mangos" and stir til gently mixed and warmed throughout. then i plate the fish and top it with the mango salsa!!!

tonight i paired it with 1 slice red tomato, some roasted green beans and a few rutabaga fries and a delicious refreshing key lime cooler!!

Coco-Curry Cauli-Poppers and Southwest Chicken Nuggets

a very simple....VERY FLAVORFUL....quick to fix....bake together and enjoy meal!!

this is what i used...curry spices, coconut spray, olive oil spray, 1/2 packet of southwest cheese curls....save the other half for snacking!! :)

pre-heat oven to 400 degrees...cut up skinless boneless chicken breast into bite size pieces...crush your cheese curls in a baggie, add salt, pepper, red pepper flakes and a dash of smoked paprika to baggie and then add in your chicken nuggets and toss to coat....pressing the crumbs into the chicken pieces.

break up your cauliflower into bite size florets and toss into a bowl and spray with the coconut spray and toss in the curry spices to your taste!! i like lots of spices!!!

spray your baking sheet with olive oil spray, and then add your chicken nuggets....and sprinkle any leftover crumbs onto your chicken nuggets. add your cauli-poppers. bake at 400 degrees for about 13 mins.

ask your coach first about a solution....but here is what i do....when i only have 1/2 of a packet, i always ADD 1/2 of another packet....like have 1/2 serving of the raspberry jelly for dessert after having crab cakes....that is just an example, and you could have any item you like, but always check with your own coach first :)

i love the little thin hamburger bun!!! when our family has burgers...now i just feel like everyone else...and don't just have a burger on a plate!! its nice to "pick it up with my hands" like everyone else!!!

i love the crunchy goodness of the tostata!!! when i make it, i only eat one tostado for lunch and then break the other one into "tortilla" chips....and sprinkle with the landolakes cheddar cheese for dorito like chips!!

i diced up 1 mini red bell pepper, 1 mini orange bell pepper and 1 red onion slice...

since i already had the ring out...i thought why not just make the patties inside the rings too....for a perfect fit!!

so....divide your mixture in half....and place half into the ring and press down with a fork all the way out to the edges and cook for about 1 and a half minutes!!...and then flip!! cook for 1.5 - 2 mins on the other side

Please experiment with the potato puree for "roll/english muffin" replacements. It would not be restricted like the crepe mix is. Below are a couple of recipes I've collected.

Keep it up rainbow. It makes this program even more fun.

Tortilla Wrap (IP Potatoes)
1 package IP Potatoes
75 ml water
1 tsp olive oil
OPTIONAL: "I Can't Believe Its Not Butter" Spray

Fill with your choice of ingredients.

DIRECTIONS:
1. Heat a pan on the stove with a bit of olive oil
2. Mix the IP Potatoes and water until blended.
3. Spoon onto pan and spread thin into a round shape like a tortilla
If it is not spreading, its too thick. Immediately take from pan and add a bit more water. It will be ok thick, but you want to make a big enough tortilla to be able to wrap around your other ingredients. Too thick=too small and heavy to properly work like a tortilla. But should also not be too thin to fall apart. So 75 ml is a very good level, but not above 100 ml.
4. Cook until set, then flip.
5. Optional... Spray with "I Can't Believe its Not Butter" for a more buttery taste.

FLUFFY POTATO ROLLS (IP Potatoes)
1 package IP Potatoes
2 egg whites
1/2 tsp baking powder
1/8 tsp baking soda
"I Can't Believe Its Not Butter" Spray
Olive Oil (spray)
DIRECTIONS:
1. Preheat oven to 200 C
2. Beat egg whites til foamy, but not stiff
3. Add in IP Potato mix, baking powder & baking soda. Mix well. Batter should be medium thick
4. Spray cupcake pan with olive oil or other 0/0/0 non-stick spray
5. Spoon batter into cupcake pan. I use large eggs, so the batter made 5 good size rolls, filling up each hole about 1/2 to 3/4 full.
6. Spray top of each roll with "I Can't Believe Its Not Butter"
7. Bake 7 to 12 min. Rolls should rise and brown a bit. Don't overcook or they may become too "papery".
8. Enjoy hot out of the oven!

Hints:
You can also add additional spices like Rosemary & Garlic Powder... Parsley & Thyme... use your imagination and let me know how you like these!

yep!!! i sure did!! i HAD to eat even if the AC was out!! got the motor replaced...late in the afternoon, but the temp wasn't dropping much....so they had to come back and add some coolant into the system...now temp is going down slowly!! 78 is much better than 89!!!

i haven't had good luck with "baking" things...they always come out rubbery like and i hate that texture!!!

the potato puree i will work on coming up with something!! haha

first off....let me say this...
CHECK WITH YOUR OWN COACH FIRST
...to see if Veggie Shreds are allowed for you....
because each person and each coach is different!!!
The coach I use has approved the use of Veggie Shreds in moderation.
This recipe used 2 tbsps of cheddar flavored veggie shreds.

so this morning....i was thinking...about the challenge from molly to use the potato puree for the english muffin recipe!!....so i decided to give it a try....

i used 1 packet of potato puree mix, 4 tbsps water and 2 tbsps milk and i added 1/2 green onion chopped and some salt and pepper.

i blended this all with my magic bullet using the flat blade. in the meantime i heated my pan and english muffin ring.

then i added HALF the mixture and spread the mixture out to the edges of the ring...and let it cook on medium heat for 2 mins....

then i flipped it and cooked it on the other side for 2 more mins!!

using a serrated knife, i sliced through them to make 2 thin rounds...
you can see the insides and how moist it is...not rubbery!!

now you could use this as a little bun, bread for a veggie sammie...or you could just make one larger one for a wrap or tortilla...but for me, i was wanting a grilled cheese!! so......

i got out the ICBINB spray and some Cheddar Veggie Shreds...i only used 1 TBSP for each sammie!!

spray the outer side of your sammie with ICBINB spray and place toasted side down into the pan...then add your veggie cheese.

get your pan good and HOT.....add your mahi mahi to the pan...HEAR THAT SIZZLE!!....YESSsssss!!!!....then reduce the heat to medium...and pan sear your mahi mahi in a tiny bit olive oil for 5 mins on each side over medium heat.

you can use up leftover steamed cauliflower for this...or steam some fresh until good and tender...then i put mine through the ricer...

i use this one...the oxo ricer that has 3 settings....and i use the smallest setting for the cauliflower.

when using a ricer, i use 2 bowls, one to catch the excess water...as i squeeze gently and release any extra water and just as the cauliflower is starting to come through the holes, i switch to the other bowl and catch only the pressed cauliflower...this eliminates any extra water so your pressed cauliflower is not watery!!!

i added the land'o lakes 3 cheese blend!! mixed well and placed into a ramekin and baked 10 mins on 350 degrees!!

That was really quick and looks scrumptious. I am going to try it for lunch. I am gong to improvise as I do not have an english muffin ring, but have a GT Express. DH suggested that as soon as I complained about not have a ring. It won't be round, but should work. Will report back.

Rose Hibiscus Jelly with Coco-Mallow Whipped Cream and Crunchy Chocolate Crumbles


i love the IP raspberry jelly....only i wanted to intensify the flavor a bit!!!
you know me...always MiX'n In The KiTCH'n!!! :D:D

So.....i replaced the water with some Rose Hibiscus Brewed Tea, added 1 TBSP Torani SF Raspberry Syrup!!!...and the results were....

I brewed my tea....and measured out 6 ounces...and added my 1 tbsp raspberry syrup and the jelly mix and gave it a good stir until all melted...then placed into my small serving dishes, (i made it into 2 servings, so i could have one for lunch, and one after supper!!)

i am not overly fond of the WF products...
but....i like the FLAVOR of the marshmallow dip only.....it was tooo sweet to me....so....

i use my magic bullet and i add 1 - 2 tbsp of the marshmallow dip and 1 tbsp milk and blend....(sometimes i will use almond milk or lite coconut milk....BUT THAT IS NOT OFFICIALLY IP LEGAL....SO....don't do that unless you clear it with your own coach!!)

(but just between you and me....the coconut milk is da bomb!!!)

...the coconut milk tones down the overly sweetness and cuts all the chemical taste!!! its a perfect blend!!! i love it!!! mixing the marshmallow cream makes it smooth and whipped and not lumpy globby!!! haha

then i top it with 1 crushed chocolate soy puff!!!


(i keep a packet of chocolate soy puffs in a small container in the freezer just for moments like this!!!!...also....sometimes....i just want 4 or 5 puffs....just enough to satisfy me!!! BUT DON'T DO THIS IF YOU HAVE NO CONTROL OVER THOSE LITTLE PUFFS....cause they are sooo good!!!)

i just made the chicken patty with the peppers - and i added shredded zucchini and scallion. Eating it over fresh picked lettuce from my garden with a little WF mayo on the lettuce. OMG - DELICIOUS! Thanks rainbow - these ideas are fantastic!!

using 1/2 of 1 IP Potato Puree Packet

ok so i have been wanting some crab cakes!!! i thought i had read somewhere on the IP treads that someone made crab cakes using the potato puree...but i could not find it....so i asked several people, and they never heard of it, so i decided i must have dreamt it!!! so i thought heck, why not....try to make some anyway!!! how hard can it be right???

first off let me say i have never in my life made homemade mayonnaise!!...that is until....today!! OMG....how easy was that!!! i will never buy store bought mayo again!!!

it was super easy to make using my little magic bullet!! its thick, creamy and best of all, all natural!!! here is the simple recipe!!

1 large egg white
1/2 tsp egg yolk (this is about 1/4 of an egg yolk)
2 TBSP Light Olive Oil NOT evoo
2 tsp lemon juice
1/2 tsp yellow mustard
1/8 tsp sea salt

Use the flat blade blender of your Magic Bullet. Add in the egg white, the yolk, 1 TBSP oil, the lemon juice, mustard and salt...remember to only add 1 tbsp oil at this time.
Pulse quickly for 4-5 short pulses...and you will see it start to whiten and come together, then pulse for 10 secs....wait a few seconds and pulse again for 10 secs.....then add your last TBSP oil, and repeat above....pulsing for only 10 seconds at a time, until thick and creamy!!!! AMAZING!!!!!!!! you now have mayo!!! if you like sweet mayo like miracle whip you can add some stevia or splenda to taste but i did not.

this made 6 TBSP mayo...which can keep in the fridge in an air tight container for 2 weeks.

UP NEXT....time to prepare the crab cakes!!!

OH MY... I am totally a newbie and this is the first time I have stopped my this thread and let me tell you it is totally my new fav (next to the daily chat). I LOVE your recipes - love that you can think outside the package and create new creations for us. Keep up the great work. :hug:

I think the recipe said one large egg white so I just used one serving of the egg beater egg whites which was, I believe, three tablespoons. Any idea what could have gone wrong? More or less of the egg whites maybe?

Thanks so much! I will have to try using room temperature eggs. It definately did thicken up after 5 or 6 hours in the fridge though. That should tell you how runny it started out! LoL!!

if it is the stacked summer salad, yellow squash ARE allowed, as are zucchini on phase 1, only winter type squash are not allowed, like butternut squash, acorn squash, etc...and the onions are NOT cooked, all the veggies in this recipe are raw and fresh.

ok...so now you guys know that I love have my hamburger on a bun...and this is my newest version....made with the IP POTATO PUREE!!!!

i started by making my english muffin type recipe for a bun...instead of the crepe mix...i started with the IP POTATO PUREE MIX....

1 potato puree packet
1 tsp baking powder
4 tbsp water
2 tbsp milk
1 tsp evoo
2 tbsp diced roasted red pepper
7-8 diced jalapenos baby!! YUM!!

mix all in magic bullet til blended and cook in non stick skillet in an english muffin ring!! i cooked 3 mins on each side over medium heat and used non stick spray...be sure to spray your ring too!

I use 93/7 lean ground beef.

so the other day i tried to think of how i might be able to make something similar to cornbread!!! cause this southern chic misses cornbread!!

i mixed 1 packet of IP POTATO PUREE...and 1 packet of IP CRISPY CEREAL MIX...and got a nice result resembling something similar to cornbread!!

it all started with this gift i got for mothers day... WHOOPIE PIE baking pan!!

....so i love my veggie purees....love them!!! here is one way i use my cauliflower puree...

SALMON BISQUE

i start with sauteing diced cauliflower, red bell peppers, yellow bell peppers and green onions....then i add salt, pepper, old bay seasoning to taste...i like a LOT....and some red pepper flakes!!....and a dash or 2 or 10 of hot sauce....to your taste....but i like it SPICY!!

once they are soft i add 1/2 cup chicken broth....i use college inn 5 calorie a can broth....and simmer til tender.

Have you tried making your buns with the crispy cereal? I have three of those and want to try making a bread type of item...I did see your cornbread recipe and it looks awesome I just don't have a potato puree right now (will get one at WI tomorrow). i topped my burger with lettuce, mustard, 1 tbsp of 1 carb heinz ketchup, grilled peppers and in the last minute i add my sliced onions and soft sauteed onions with just a wee bit of braggs amino for color for about 30 seconds.,,,but check with your own coach before doing the onions. I use 93/7 lean ground beef.

yep thats is the current me...taken a few weeks ago at the theatrical musical annie!!! thank you for saying that though!!....i am, unfortunately, shaped like a pear, so a head shot doesn't look so bad hahaha

Wowee, these recipes look wonderful! I think I'm going to splurge on a magic bullet to make the mayo, plus I could use it for the purees listed in another thread. I LOVE crab cakes, and all the other recipes look awesome, the photos are great! Thanks for taking the time to share with us!

Have you tried making "rice crispy treats" out of the crispy cereal? I was just wondering because I tried one of the vanilla "bars" today that was just like rice crispy treats, but it is restricted. I was thinking there should be a way to make a similar treat out of the crispy cereal so it wouldn't be restricted.

so in keeping with my try something new each week....
this week i very very reluctantly purchased a big ole fat fennel!!!
Let me first say, i DO NOT LIKE LICORICE!!
and I LOVE GIADA!!! i love watching Giada on the cooking show
and she LOVES fennel...she says it tastes like licorice...
and guess what...she is RIGHT!!!!! i washed and sliced my
lovely fennel...and tasted a nibble....ewww....licorice....black licorice!!

well....maybe it tastes different once cooked???
so off i went to google a recipe...hmmm i have fennel....
some rutabaga....some leeks...what can i find to make???

My inspiration was this...

1/2 Leek sliced
4 Green onions
1/2 Large Rutabaga peeled and thinly sliced
1/2 Large Fennel sliced
2/3 cups veggie shreds (i used 1/3 cheddar and 1/3 mozzarella flavor)
1 packet IP Potato Puree
1 Packet IP Crispy Cereal (dry milk only)
ICBINB spray
1/2 cup chicken broth (i used college inn fat free broth)
1 tbsp vegan soy parmesan cheese
pam olive oil spray
glass baking dish

first...separate the crispies in the IP crispy cereal packet from the powdered milk and save the crispies for another use)

mix the IP potato puree in a small bowl with some salt, pepper, 1/3 cup mozzarella veggie shreds, 1/3 cup of veggie shreds cheddar flavor

most coaches DO ALLOW veggie shreds as a portion of your protein...but check with your own coach first.

wash, peel, slice veggies

spray your baking dish with non-stick spray and preheat over to 350.
next layer your veggies!! layer the bottom with the rutabaga slices.

Next add your fennel, green onions and leeks

then top with 1/2 your potato puree and veggie shreds dry mixture

then finish off the top with the rest of the potato puree and veggie shreds mixture and spread it out all evenly.

next, mix 1/2 cup water with the dried milk from the crispy cereal mix and pour 1/2 cup chicken broth
then pour these 2 liquids evenly over the entire gratin.

next, give the entire top a spray of ICBINB spray, add some salt and pepper, and 1 tbsp vegan soy parmesan cheese.

bake for 1 hour on 350 degrees!!!

i served mine with sliced ham....i had thought about adding it into the gratin...but was still unsure about the fennel!! so i didn't...but next time i think i will saute some ham chunks and mix them in all together for a ham gratin!!!

this made 2 servings...2 large servings!!!
let me tell you....it was phenomenal!!!

you could not even taste a licorice taste at all!!!!!!!!!!!!!

i added my sauce to my dough, then topped it with my meat mixture

then i folded it over using the parchment paper, and crimped
the edges while still in the parchment paper.

then s-L-O-W-L-Y remove the top portion of the parchment paper
and turn it out onto your baking pan
and carefully pull the other side of the parchment paper off.
if the dough starts to stick or tear...
pop into the fridge to get cold and it will peel off easier.

i baked according to the same instructions for pizza
350 degrees for the first 15 mins
then i changed the oven temp to 375 degrees
and baked 9 more mins.

potatoes for him and rutabagas for me!! :T

i carefully put his potatoes all the way on one end
and my rutabagas on the other!! no baking cookies

milk allowance for the day, added a little milk into
the bowl, and gave it a swirl!!!

i know lots of IPeeps have made the cauliflower rice....however, instead of grating it...which is what i was going to do, as i was getting my box grater out of the drawer, i saw my old cheese grater....you know the kind....like they have at olive garden when they come around asking if you want cheese....with everything!! but i digress....anyway, i thought hmmmm....so i popped in a few small pieces of cauliflower and churned away...and into the bowl dropped the most perfect tiny pieces of cauliflower...very tiny almost grits size....(hmmmm cauliflower grits....another day).....it was like tiny rice!!

so i heated the pan...and used 1/2 tsp coconut oil....and added all the cauliflower and sauteed until lightly browned in a very dry pan...didn't add any other thing except salt and pepper...and OMWORD.....IT TASTED LIKE COCONUT RICE or toasted coconut vermicelli!!!!!

i got so excited i forgot to take pics of the ham and peppers sauteing in the other pan!! hahaha but i sauteed some red and orange mini bell peppers sliced and some green onions in a pan with 4 oz. diced ham...once lightly browned i de-glazed the pan with about 1/4 cup 0/0/0 chicken broth. in the end, i plated it on each side, but ate it mixed!! i topped it with some fresh parsley and thyme from my herb garden!! whooop whoooop!!! YUM!!!!!!!!!!!!! i love it when i make something soooo good for me that tastes sooooooo delicious!!!

so i made it again, and took some photos of the ham and peppers and green onions in the pan!! it was just as good as before!! this is a keeper recipe!!!!

its no secret that i love love love kale chips!!!!!!!! i eat them 4-5 times a week!! usually as an afternoon or bedtime snack!!

keeping with my try something NEW each week....this week is
ZUCCHINI CHIPS!!

i have to tell you....i am NOT a huge zucchini fan...i do like it in soup...but not cooked alone or even roasted. so i was super super skeptical. and 2 hours of time invested!!! fortunately the oven does most of the work!!!

i had to practically FORCE myself to slow down from gobbling them up!!

i love savory things!! and i love crunchy things!! and omg...these were so delicious!!!!

MOVE OVER LOVE OF MY LIFE KALE CHIPS....theres a NEW CHIP in my life!! hahahaha and his name is SIR ZUCCHINI CHIP!!!!

i just made some for the first time ever in my life....after reading about others making them using their dehydrator and me coveting everyone's dehydrator...i thought i'd make some in the oven.

i used parchment paper and a few were on the edge of the pan....divajen is NOT kidding, they stick like mad....so use parchment paper for sure!! i used a MISTO sprayer for a very light spray of EVOO. i added salt and pepper.

one medium zucchini made all these chips!!!

DO NOT OVER SALT!!!!!!!!!!!!!! let me say that again....i thought i used only a wee bit and they were borderline too salty but OOOO SO GOOOD!!!

i Baked at 170....the lowest my oven would go, for 1 hour, then turned them all over, yes one by one!! DONT SKIP THIS STEP!! ....and baked another 50 mins (or more, ch3eck each 5 mins for crunchiness level) and they were crispy like potato chips....crunchy!!! YES!!!! i barely got one photo...before i gobbled them all up....1 zucchini made a whole pan but i can tell you, they were eaten in a few minutes!!!!!!!!! a skinny new york minute!!!! i will probably make some more for supper as this was a test run!!! i LOVE LOVE LOVE THEM!!!!!

i cut out the triangle section of the stem...because sometimes that thick part can poke a hole through the cabbage roll...

for the chicken sausage rolls...just add the whole sausage, or you can cut in half if you have smaller cabbage leaves...and roll...

i divide my 1 lb of ground beef mixture into 12 sections...that i roll into small logs...3 "logs" = 4 oz meat...plus the veggies...so 6 logs can be a serving...but thats a lot of cabbage rolls!! haha i will have 1 sausage roll and 2 beef rolls for my 8 oz portion of protein.

gf...i REALLY wish i did!!! i have had ZERO luck "baking" using IP products...my muffins fall FLAT and feel rubbery in texture and microwave things puff up then fall flat and taste rubbery so i quit trying!!

i am not much on sweets...so never tried again!! haha

i have started using an alternative product though....that might have better results so i will try to come up with something if you are interested. let me know :)

Yeah, nothing really stays puffy, eh? Alas.

I think I'm going to try making a cupcake type thing out of the crepe. I have a liquid birthday cake flavour additive that's 0/0/0 so I might add that to get in a bit more of the cakey taste. Wish me luck!

Rainbow, the cabbage rolls look heavenly!! This is dinner tonight! I have always been such a good cook but since I have been on IP I have become a little lazy about cooking. Just opening packets, mixing drinks. I forget I could still have REAL food and still be OP.

i thought it best to TRY the tofu version before i invested in ordering MIRACLE NOODLES....but no doubt, you could use miracle noodles or shirataki tofu noodles for this recipe

spread out your "dough" onto your pizza pan lined with parchment paper
i made 2 pizzas!! but you could just make one big one

i used a smaller piece of parchment paper
on top to help me spread it out to about 1/8 inch thickness
peel the paper off gently and press out the other pizza

bake at 450 degrees for about 20 mins

and when the sausage and pepperonis are nice and browned, then
add your onion and stir just to take off the raw bite...
do not over cook or caramelize as this releases the onions sugars

spread your sauce onto your pizza crust and top with your
delicious sausage and pepperonis!!

OPTIONAL: add 1 - 2 tbsps veggie shreds mozzarella flavor... YES veggie shreds are allowed on IP
and 1 tsp parmesan cheese on each pizza...
parmesan cheese is NOT IP legal...so if you are on alternatives, use it sparingly.
if on strict IP, omit and leave off

WOW!!!! was this ever good!! the crust was firmer than cauliflower crust!!!

you could not even taste the shirataki noodles at all!!

the edges were CRISPY and had a nice CRUNCH!!! the middle was a bit softer....next time i think i'd
bake it directly on the oven rack AFTER adding the toppings so the bottom stays more firm!!!

the pizza is bigger than it looks!!!
the larger one is about 9.5 inches across and the smaller on is 8.5 inches across!!!!

can't wait to make this again!!!!!!!!!!!!!!

maybe you need to bake them a little longer?? keep them in the oven and check every few mins.

my first batch cooked in 1 hr and 50 mins.
other batches have taken up to 2 hours and 20 mins.
i guess it depends on the moisture content and how much salt you add??? and how thick or thin you slice them.
salt helps draw out the moisture.

did you turn them all over?? this helps dry them too.

maybe they are sliced thicker than mine were???

those are a few options!! hope that helps....dont give up!!! they are worth the effort to find the right temp and time to get them crunchy!!!

i use a MISTO sprayer and spray lightly with evoo so the oil works. sometimes one zucchini might just have more moisture than another.

and yes,,,,i have said many times now...my ODE TO THE ZUCCHINI....over 2 hours to bake and under 2 mins to eat! they DO shrink!!! but oooo are they good!!!!

today....i have in a mix of yellow squash and zucchini chips...baking now.
last night i baked beet chips!!!! woohooo i need a dehydrator!!!!!!!!!!!!!

That is a great idea LizRR. I'm not a miracle noodle person but I would imagine that it would be pretty much undetectable in a meatball (or in a pizza crust, ;) ) for that matter. Did it add to the moisture of the meatball?

no need to peel....just scrub clean and slice to desired thickness....
the thicker they are the longer they take...but less likely to burn...
you must baby sit the oven on the last 10 mins of these beet chips!!!

and make sure you Slice on a cutting board or old dish towel as sliced beets DO MAKE A MESS!!!!

not to worry though...it scrubs off easily with a little soap and a dash of salt as a scrubber!!!

the dryer side was crispy crunchy and soooo good!!! roasted flavor good!!! the less dried side was chewy....similar to a fruit roll up...and oooooh SUPER delish!!!!!!!!!!!!!

i was so surprjsed at how good that pizza crust was!....made from noodles!!

i remember years and years ago in school home ec class....we made a pizza crust using cooked spaghetti noodles but used them whole and it was pretty good then!! that is what made me think of it...but i didn't really like the TEXTURE of the noodles whole, so i thought what if i grind them up??? and it worked!!

i love when a plan comes together!!!

yes!!! i have had a mandolin for years and LOVE IT!!!!

I have had my mandolin slicer for well over 20 years, but now it's not slicing evenly. What brand do you have?

I just finished my 2 hours+ for the yellow squash chips and you were right, they're heavenly.

Just put in a batch of zucchini chips now. We'll see in 2 hours. I bought some of both squash yesterday since just running into town for something on the spur of the moment isn't an option for us.

P.S. Put in a request to our Publix for frozen rhubarb since you pictured a pack in one of your recipes. I missed buying 30# of fresh frozen up in Michigan by a week. You order it and then they only have it to pick up for one week. Of course, when we're not there. :cry:

this is what i used!!

1 pkg Proti-Thin Cappuccino Mix
3 TBSP egg whites
1 teaspoon baking powder
2 tsp Coconut Butter or coconut oil
1 teaspoon splenda

i put all of the above into my magic bullet and blended.
it made a nice thick dough.
i dropped 6 spoonfuls onto parchment paper and then pressed them
down to about the thickness of a thin mint cookie
bake 350 for 10-12 mins, do not over bake...they will harden more as they cool
let cool for about 5 mins
CRUNCHY CRISPY COOKIES!!!!!!!!!!!

i took mine one step further and made a frosting!!
i mixed 2 tsp coconut butter and some cocoa powder to taste, i used about 1 tsp and 1 tsp splenda....and spread that on top!!
this is not IP phase 1 legal, but i am also doing alternatives
and the cookies are really good just plain!!!

Okay, they look great, BUT I am not a cappuccino person. Not really even a thin drink person. All I do is shakes from pudding mixes. What's your thoughts on a pudding mix or does it have to be a drink mix?

i am not sure...i bought the cappuccino mix BUT DID NOT LIKE IT haha AT ALL...and was about to give the rest of the packets away....so i thought why not try this cookie recipe and see as i really had nothing to lose!!

i don't think i have any pudding mixes...because i didn't like them either and traded them away....but i will double check and see if i have any and i will give it a test if i do and let you know. :)

i am so glad i didn't give the cappuccino mix away!!! can't wait to make these cookies again!!!

ok...i only had a half packet of lemon pudding mix....to test with...because i traded all the pudding mixes away because i didn't like them.

the recipe stayed the same despite half the packet...i tried with less egg whites but the mixture was too crumbly....and the only thing i added was 1 tsp lemon extract to enhance the flavor

it wasn't much dough....so i decided to make tiny cut out lemon cookies.

the dough was a lot like play dough...easy to roll with my hands and easy to cut out.

because they were so tiny, i baked for 10 mins and they were pretty done...starting to brown on the bottom.

they were very light inside...a little chewy....and tasted lemony...

these are not bad!!! not as good to me as the cappuccino ones....which were extremely CRUNCHY!!!

and these....using the ip lemon pudding....STILL HAVE THAT IP PUDDING AFTER TASTE...that does not appeal to ME.

but if you like the IP lemon pudding i am sure you'd LOVE these lemon cookies!! :)
a little crispy edge and soft chewy center!!

ok so on the 4th of july, i saw so many people having hamburgers and i wanted one too!!! but i only had the burger with NO bun :(

still, the desire for a bun increased so i made the recipe for the "english muffin" only made it into a thinner version, making 2 muffins from the same recipe, and then sliced them in half through the center, then toasted them cut side down in a pan....and wow!!! hamburger buns!!!

its really just the rosemary english muffin minus the rosemary :)
sometimes i make 1 thicker one and sometimes i make 2 thin ones, your choice

ENGLISH MUFFINS

Ingredients:
1 IP Crepe Mix
1/2 Tsp Baking powder
1/2 Tbsp Olive Oil
1 dash salt
1 oz skim milk (from morning allowance)
6 TBSP Water (just enough to make it a thick but pour-able batter)

You can add all the ingredients into a magic bullet hopper and
use the flat blade to blend or: if you don't have a magic bullet...

Whisk together dry ingredients.
Add oil and mix in until it starts to form crumbles.
Add milk and mix well (it will become a doughy batter at this point)
add enough water so that it is thick but able to be poured.

Let it sit a few minutes to thicken.

Spray a nonstick pan with Pam and spray inside your English muffin rings also.

Put your pan with the muffin rings on the stove and get it nice and hot then pour your batter into the ring. You really don't have to fill them much more than half way. This will make the bottoms nice and crisp. once it has cooked and gotten a nice crispy bottom ....cooked on medium heat for about 3 mins, then I just slipped my spatula under the entire ring and flipped carefully!! cooked on the other side about 3-4 mins. I let it cool on the rack for a few minutes

Optional: then i toasted each half in the toaster on bagel setting, so to only toast the one side that was not already toasted!! IT WAS THAT DELICIOUS!!!

Oh my goodness rainbowsmiles, I just cooked up a batch of your english muffins. I didn't have the rings so I used 3 mason jar rings and they turned into the perfect little pancakes which I'm savoring right now with a bit of wf pancake syrup and a tiny bit of wf strawberry spread. Oh so delicious.

I can't wait to try your crabcakes :)

I made your cookies for breakfast this morning, Rainbow and they were yummy. I didn't have any coconut oil so just used a tsp of EVOO which worked. I spread a little WF chocolate and caramel dip on them, yum! Thanks

hi sara, for the summer yellow squash i baked at 175 degrees and for 1.5 hours on one side and then i turned them and baked until crispy...about another 40-50 mins. They do take a long time in the oven....alas...i do not have a dehydrator!!! but they are so worth the effort!!! they are scrumptious!!!

BRUSSELS SPROUTS CHIPS

7-10 brussels sprouts
1 tsp. olive oil (I use my Misto olive oil sprayer)
1/4 tsp. salt

Preheat oven to 350 degrees.

To remove outer leaves of brussels sprouts, use a sharp knife to trim off the very very edge of the bottom. Outer leaves should fall off easily. Once outer leaves are removed, trim the bottom again, removing more leaves. Continue removing leaves until they become difficult to peel off.

Save the center of each brussels sprout for another recipe. (i roast them in the oven with garlic for soups)

Spread leaves out in a single layer on baking sheets lined parchment paper. Spray with EVOO and I give them a little rub down to evenly coat!!

Roast for 10 minutes, then check leaves. Remove any that are crisp. Place baking sheet back in the oven and check every few minutes until all leaves are crisp. A little browning on the edge of the leaves is fine, but don’t let the entire leaf turn brown or it will become bitter.
Serve immediately.

someone asked me what was my green goddess soup!!

i will post some more photos when i take some in progress...

GREEN GODDESS BiSQUE

i start with 1 can chicken broth in a small pan

add:

3/4 cup zucchini sliced
3/4 cup frozen broccoli
1/4 cup radish slices
1/4 cup frozen colored peppers and onions

simmer about 10 mins or until veggies are al dente tender
not mushy!

cool slightly and puree in magic bullet or blender

pour into bowl and i add 1-2 oz milk and swirl!!
i also add some red pepper flakes for some spice!!

i love lemon....i love the smell...i love the taste...i love the zing!!!
i have tried and tried every IP lemon product and some alternatives from nashua nutrition (take my advice and don't order the lemon meringue bars YUK to the tenth degree)

so....i had to come up with something to satisfy my desire for all things lemony!!

LEMONYSNiCKETY!!!!!!!!!!!!

iT'S READY TO EAT IN 1 MiNUTE!!!
ONLY 1 MiNUTE iN THE MiCROWAVE!!!

1 tbsp flax seed meal
1 tbsp carbquick,
1 tbsp coconut flour,
1 tbsp sweetener of choice, (powder stevia, splenda, erythritol)
teeny tiny dash salt,
1/2 tsp baking powder,
and a dash of poppy seeds...

mix all that in a bowl...and then add:

2 tbsp liquid egg whites
1 tbsp milk
1 tbsp fresh lemon juice
zest of half a lemon

mix well and spray 2 small dishes with coconut spray or pam spray and divide into 2 dishes.

spread out evenly...not much mixture but it does rise up a bit

MICROWAVE on high 1 minute!! thats it!!

then top with .5 oz tofutti cream cheese mixed with the other half of lemon zest, a little lemon extract or lemon juice and some splenda...mixed and spread on top!!! omg good!!!

They were moist, fluffy not rubbery at all!!!
and most of all would not be restricted.

If you think those are good, you must try the yellow squash ones. I was hesitant as I like yellow squash less than zucchini, but I agree with rainbow, they are a lot better.

i spray the tops lightly with some coconut spray...
so that it makes them easier to pat flat and not have them stick...
but you could probably use a teeny bit of water on your fingertips as well.

add your veggies into your blender....

add roasted red pepper to taste, 1 tbsp tomato paste, curry spice to taste....
and enough broth
to make it soup consistency.

pour into your bowl and reheat if necessary!!

because i am now doing alternatives....
i topped mine with extra cinnamon and splenda
a few pumpkin seeds (optional) and 1 tbsp coconut milk (optional)
and one slice turkey bacon crumbled!!!!

I'm glad I thought to check out your thread tonight! I didn't realize you were doing so many creative things now using alternative products. Fantastic! There are several there that made my mouth water... definitely gonna give them a try.

I feel like I'd like to buy some alternative product cappuccino packets just so I can make those cookies! :) Wonder if there's a way to make them using cappuccino protein shakemix.....?

I love your recipes! I definitely am printing some out tonite. I went to Whole Foods for coconut oil and it's loaded with carbs. Is that okay? It's only my first week on. I did but the spray though and used it to sauté chicken. It was delish

check the nutritional label again...it is high in fat, (but so is EVOO) but LOW and sometimes even ZERO carbs.

the smaller ones seem a little more "sweet"
the larger ones not quite as sweet

so i had 3 oz of leftover grilled chicken!!! i sliced and diced it!!

dice 2 pieces of turkey bacon

dice some red onion...i used about 3 tbsp

1 tbsp evoo
2 tbsp apple cider vinegar
1 tbsp amino acids
1 tsp each:
cilantro, red chili pepper, ginger, lemongrass
(can also use garlic but i was out)
add dash celery salt, red pepper flakes and poppy seeds!!

Rainbow...whats the deal with the coconut oil (in a jar). is it the same as using EVOO? better for you?
Im on Phase 1 strictly IP no alternatives...Please advise..your stuff always looks so yummyyyyyyyyyyyyyyyyyyyyyyyyyyy!!!!

i tend to use coconut oil when pan frying, searing or sauteeing, and i use evoo in salad dressings or for veggie chips

BOTH are very good choices.

if you are strictly IP, then only use evoo...or ask your coaches advice and do as your coach suggests because working with your own coach and being on the same page is very important.

i do not have a coach. all of the ipees here are MY coaches!! :grouphug:

i am planning to eat paleo following my ip journey, so am incorporating some good choices now that will carry my through my lifetime....like coconut oil, coconut milk, almond milk and occasionally some nuts like pumpkin seeds and almonds.

i suggest looking online for health benefits of each and then making your own choice as to what is best for you!! :)

i traded ALL my pudding mixes away!! i only had 1/2 of a lemon packet to experiment...see the recipe back a few pages for the lemon cookies.

they were golden and had crispy edges...and a tiny bit chewy in the middle...the flavor was delicious, but the aftertaste that i taste in the puddings was still there....so i didn't care for them...however, DH came home and LOVED them and ate them all!!!! so i will be waiting to hear your results!!!

i love the wildberry yogurt cookies!!!

i think this is the best cookie recipe!!! i dont know why, but each time i make a cookie from the drink, the texture and crispiness are always different!!

its no secret that i love love love kale chips!!!!!!!! i eat them 4-5 times a week!! usually as an afternoon or bedtime snack!!

keeping with my try something NEW each week....this week is
ZUCCHINI CHIPS!!

i have to tell you....i am NOT a huge zucchini fan...i do like it in soup...but not cooked alone or even roasted. so i was super super skeptical. and 2 hours of time invested!!! fortunately the oven does most of the work!!!

i had to practically FORCE myself to slow down from gobbling them up!!

i love savory things!! and i love crunchy things!! and omg...these were so delicious!!!!

MOVE OVER LOVE OF MY LIFE KALE CHIPS....theres a NEW CHIP in my life!! hahahaha and his name is SIR ZUCCHINI CHIP!!!!

i just made some for the first time ever in my life....after reading about others making them using their dehydrator and me coveting everyone's dehydrator...i thought i'd make some in the oven.

i used parchment paper and a few were on the edge of the pan....divajen is NOT kidding, they stick like mad....so use parchment paper for sure!! i used a MISTO sprayer for a very light spray of EVOO. i added salt and pepper.

one medium zucchini made all these chips!!!

DO NOT OVER SALT!!!!!!!!!!!!!! let me say that again....i thought i used only a wee bit and they were borderline too salty but OOOO SO GOOOD!!!

i Baked at 170....the lowest my oven would go, for 1 hour, then turned them all over, yes one by one!! DONT SKIP THIS STEP!! ....and baked another 50 mins (or more, ch3eck each 5 mins for crunchiness level) and they were crispy like potato chips....crunchy!!! YES!!!! i barely got one photo...before i gobbled them all up....1 zucchini made a whole pan but i can tell you, they were eaten in a few minutes!!!!!!!!! a skinny new york minute!!!! i will probably make some more for supper as this was a test run!!! i LOVE LOVE LOVE THEM!!!!!
