Faux Spinach Enchilidas
Spray a 8x8 pan with pam spray
Saute 1/2 onion, 1/2 green pepper & chopped beet tops
Add 1/2 cup of chicken broth while cooking.
Place 3 corn tortillas in the bottom of the pan & top with veggies
Sprinkle 1/2 cup cheese & enchilada sauce
Make another layer & add sauce to the top.
Bake for 40 minutes @ 350.
I know the cheese is high in points & the corn tortillas are 1 point each. The enchilada sauce is virtually ff, so I guess one serving to be 5 points.
