Any of you have a good kale recipe? Preferably simple, since I've never worked with it before And, if you know the calorie count

I absolutely love kale chips! Heat the oven to 350, spread some raw kale pieces (pull the thick stems off) on a baking sheet. I also like to spray them very lightly with a little pam and then sprinkle with a small amount of seasoning (be careful not to go overboard esp with salt because it intensifies a little bit. Then just bake for 10 or so minutes, or keep watch so it doesn't overcook. The pieces will flatten out to the baking sheet and become nice and crispy. So yummy!! And I usually weigh out the kale first, it's 15 cals per ounce, and if you just use Pam then it's only the calories from the kale to take into account.

In Germany, they eat tons of Kale and potato stew in the winter - just google "Kale stew".

Frozen kale also works well in fruit smoothies.

I use kale quite a bit. Anywhere I use spinach, I also use kale. So, cooked the.
Recessed and tossed with live oil and garlic. Served like that as a side or over pasta or brown rice. Made with a light cream sauce (using milk thickened with a bit of flour versus cream). Added to lentil soup and so on. Options are endless.

I LOVE this Kale salad (not very winter-y, but so good!)

The calorie count on the dressing is 109 calories for 1/8 of the recipe, which = 2 Tablespoons (she gives a range of amount of olive oil to use in the recipe and I use the middle end - 3 Tablespoons for the whole recipe). I actually froze about half of my dressing and will thaw it out when I have kale again.

The remainder of the calories depends on the amount of veggies and if you include walnuts and/or avocado, so you can adjust the calories as you like (for example, I used 1/2 oz of nuts to cut the calories). Looks like last time I ate this in December, I used 100 g kale, which = 50 calories, according to FitDay. It is 57 calories for 1/4 an avocado, 92 calories for 1/2 oz walnuts, and between 6 and 30 calories each for the tomatoes, bell pepper, cucumber... etc.

For one serving, I used: 100 g kale, 1 medium carrot, 1/4 an avocado, 1/2 a red bell pepper, 1/4 an English cucumber, 10 large-ish cherry tomatoes, 1/4 oz goji berries, 1/2 oz walnuts and 2T of the dressing. I didn't use raisins and I don't have hemp seeds so those were not included either. It was 409 calories and very, VERY filling. I made it the next day without the walnuts to save almost 100 calories.

This is really good and opened my eyes to eating kale raw. I hope you enjoy it if you try it.

MMMMM i love kale smoothies! Its two cups of water about a 1 1/2 cup kale 1 banana 1 cup of frozen mango and 1/2 a pear (i like to peel the pear the texture is weird for me) and blend all in a blender For extra sweetness you can add a little honey.
