A vegan burger would not include an egg or any animal products.
A vegetarian burger could include eggs, cheese and milk.
Here are a few I like to make.
Meatless Mushroom Burgers
2 c. mushrooms, finely chopped
2 eggs
1/4 to 1/2 c. seasoned bread crumbs
1/2 c. Cheddar cheese, grated
Onions, if desired
Mix all ingredients and form into patties. Fry in butter until lightly browned. Serve on a bulky roll plain or topped with a cheese sauce.
Easy Veggie Hamburgers
2 cups oatmeal, uncooked
1-1/2 cups bread crumbs
1/2 cup grated cheddar cheese (optional)
1 medium onion, chopped
1 tsp. salt or 1/2 tsp. garlic salt and 1/2 tsp. seasoning salt
2 tsp. savoury or any herb to taste
1 can mushroom soup or can use milk to moisten
2 eggs (or 4 egg whites)
Mix all ingredients together. Fry in small amount of oil, keeping patties flat. Fry slowly on low heat. Serve on hamburger buns with your favourite condiments. These burgers are also delicious served as a cold sandwich with salad dressing, lettuce, tomato, and cheese slices.
Double Mushroom Burgers: Add 1 can of drained mushrooms to the ingredients and serve as usual or serve as patties in your favourite sauce.
And this is a vegan recipe that turns out pretty good. You really need to have them thin.
Veggie Burgers
(Excellent burger made without eggs.)
1 1/2 cups vegeburger (or TVP soaked)
1/3 cup cooked oatmeal
4 tablespoons onions, chopped
1/2 medium potato, grated
1/2 teaspoon salt
1 teaspoon savory (or 1/4 teaspoon sage)
1 tablespoon soy sauce
1/4 cup whole wheat bread crumbs
Mix above ingredients. Spray skillet with Pam. Form into small patties and fry until nicely browned on both sides. Or, may bake on oiled cookie sheet in 375 degree oven. Serve in place of hamburger on buns with lettuce and tomato.
