While enjoying my yummy dinner this evening the idea for this thread came to mind. Post what you had/are having for dinner....all in one place. Great for newbies to get an idea as to what more experienced IPers are eating and give some of us experienced Ipers a few new ideas. :)

I love the idea for this thread. I've seen it on other boards-goes by WFD (what's for dinner) or WFL (what's for lunch)

Plain ol' burgers on the grill here! Hubby's with cheese and a bun and chips. Mine with relish and sf ketchup inside a romaine leaf, side my crunchy pickled salad.

I made stuffed peppers with lean pork and lean ground beef, cauliflower for the "rice" and diced tomatoes. Added a bit of chicken both and spices for flavor.

Chicken Shawarma- marinaded the chicken in oil/ garam marsala/ paprika/ sea salt/ cayenne for a day in a ziploc baggie.
Then cut into bite size pieces and put them on a skewer with cut zucchini and red onion...

Miracle Noodles marinated in evoo, garlic, ginger, soy sauce, cayenne, curry, sea salt and pepper, with sliced grilled chicken breast.
Oven Roasted squash, red/orange/yellow/green peppers, mushrooms, asparagus tips, garlic.

Night time snack: vanilla almond poppy seed pudding cake & a propel water.

Maykatcooper introduced me to the Joyce Chen Spiral Slicer over on the recipe 3 thread. It's great and very inexpensive. I ordered it on Amazon and had it in 3 days.

The wf alfredo sauce out of the jar is ok, but i added two cloves of garlic and chives to the mix and with the chicken and zuccini it was great. I used a mandolin for my fettucini.

7 oz shrimp
1 1/2 c zucchini cut up like fettucini.
added 1/4 c green onion at the end (raw)
1 tsp olive oil.
1 tbsp garlic
1/4 tsp sea salt

2 cups lettuce
1/4 c green onion
tbsp WF chipotle ranch salad dressing with 1tsp mustard. I don't really like the dressing on it's own in salad but adding the mustard it made it really yummy.

Side note: I do like the WF chipotle ranch on chicken/salmon when I bake them in the oven.

What is EVOO? I see a lot of ppl posting this in their threads.

Chicken Taco's with Romaine lettuce as shells. Going to use a little salsa (my sub for occasional veggie) also. Cauliflower mexican "rice" on the side and in the taco. YUMMY :)

Halibut with a pico di gallo sauce served over top made with tomatoe, onion, cilantro, lime juice and garlic. On special occasions I add some salad shrimp to the pico. So yummy and makes me feel like I am having something special.
I love shrimp. So I use it alot when I am tired of chicken and brocolli. It's so easy to use... Just thaw and eat.

I've been super spoiled because haven't paid for a cucumber in at least a month and my fridge is still full of them. I have a wonderful friend at work who grows them and has kept me stocked. (And I eat one everyday for lunch.) My girls love them too. Infact tonight, we had a concert we had to attend and for their snack they brought cucumbers and people thought that was so strange.

I told my husband I'll be sad the day he picks his last one and I actually have to pay for them. There is a bag full of zucchini and squash on the break room table right now and I also found the best tomato in there this morning. I had it at lunch with my cucumber because I haven't had one in almost 2 weeks. I'm to the point where a tomato is almost like candy it tastes so sugary.

I wish I had a green thumb and could grow some of this stuff on my own. I don't have the time or the patience either though.

I'm going to marinate some chicken breasts in homemade Asian-style salad dressing and then grill them outside. I'm going to stir-fry some asparagus, red bell peppers, and broccoli in some healthy oil and soy sauce. I can't wait!

Do you do anything to the mayo? I couldn't even barely get myself to taste it after I opened it and smelled it. It's awful!

I had salmon with lemon pepper and olive oil and zucchini. I fried the zucchini and I wasn't a fan. I have some left so how should I prepare it so it's yummy? I need all the help I can get in the kitchen.

I made grilled turkey breast and an asian salad:

Asian Salad:
1 lrg head of Sui Choy (Napa Cabbage) - cut out large vein and chop into strips
5 green onions, chopped
about 2 handfuls of "broccoli slaw"

Allow those to get to know each other for a while....

I add a few slivered almonds (toasted), and some sesame seeds (not OP, but very few carbs)

Dressing:
1 tsp. soy sauce
1/2 cup splenda (dry powder)
1/4 cup vinegar
1/4 cup oil

THIS makes enough for 2 salads worth (2 family salads on separate nights)

I drizzle the dressing over each individual salad, and keep the rest in the fridge...and only a wee bit of dressing (2 tsp).

This is delish!!!

Bison meatloaf....take 2 lbs of ground bison and put in a food processor with 2 peppers (1 yellow, 1 red), add in whatever spices you like - rosemary is great! - and sea salt and pepper.

Put it in the oven @ 350 for about 45 min-1 hour. It was fabulous. Unfortunately, our naughty golden retriever also thought it was fabulous since he countersurfed half of the meatloaf...yes, that's right, he ate 1 lb of meatloaf.

I served that with an arugula salad with EVOO/lemon.

Lean grass feed beef with a little splenda, chili powder and a dash of tomato sauce. On top of that I put a mashed cauliflower and shredded zucchini hash seasoned with chicken broth, cajun seasoning, garlic, and onion powder. It was actually pretty good. The hash was browned with some EVOO (I had to squeeze the moisture out before I made a sort of pancake hash).

I am not a big fan of the WF products but was surprised how good my simple dinner was tonight. I made a big garden salad and put theWF Asian dressing on it. Then I poached a chicken breast and then put some of the spicy WF BBQ sauce on it and heated it a bit in my grill pan. It was a yummy combination.

Last night I had grilled salmon and asparagus with garlic and a dash of Molly McButter. I need to buy my some more asparagus today as it was yummy.

Ok, I need cooking tips here, sorry to ask a stupid question. My DH always cooks salmon on the grill in foil and TONS of butter. How do you grill salmon so it is not dried out? We live in the Pacific NW and have some of the best salmon ever and I have missed it lately.

I tried one of the recipes on the recipes thread:

Chicken Sauerkraut bake with some WF hickory BBQ sauce and a dash of cayenne pepper over the top and it was SUPER yummy!!! I even made a "double batch" so I could have the same for tonight since I will be pressed for time this evening :)

Wild - I drizzle EVOO on mine and add a lemon wedge along with whatever seasoning you like (I like the Ms. Dash herb seasoning) and wrap it tight so that it will stay juicy :) Oh, and I also add a spoon of chopped garlic in my foil wrap too :)

Technically only raw onions are allowed on phase 1, I have always cooked mine and never had a problem. When I talked to my coach about it she said just to cook them to translucent and not to caramelized and it won't change where they sit on the glycemic index.

This is the recipe I used...not so much a recipe, but just threw some spices in bag and let it all marinate and it was delicious :) Next time I'll pay more attention to amounts I use or maybe Capricious will come on and clarify for us!

So I made the Big Mac in a Bowl for dinner and the whole family loved it. :carrot:

I made enough meat to have another meal for me and my 8yo said she wants to take that for lunch next week, so could I make some more.

Well, I was super hungry so I ate my protein at lunch:

Lean, white meat ground turkey
1 bag of shredded cabbage from Trader Joe's
1 package cut up mushrooms
1/3 c. unsweetened ketchup
1/3 c. no sugar mustard
21 season blend from Trader joes

Saute veggies in EVOO, season with Trader Joes spices. Cook ground meat. Combine cooked veggies and meat....add in ketchup and mustard. Stir & serve.

This is a variation of a recipe that someone else posted. Its a new favorite in my house. My husband, who is not doing IP, requests this for dinner a lot.

Warm Chicken Salad w/ egg

Sauteed up some garlic & red pepper flakes in EVOO, added zucchini, onion, asparagus, and bell peppers along with a little bit of chicken broth, once veggies were tender I threw in my cooked chicken breast and tomato to heat through.

Served it over a bed of spinach, field greens and romaine with diced up egg tossed in roasted garlic dressing :)

YUMMO 10 minute dinner :)

I posted this to FinnSteven because he had asked for a dressing recipe. I had to look for a rice vinegar (nonseasoned) without carbs - but I figured I would add it here too!

I love this asian noodle salad because the family can eat together - with udon/soba noodles for the hubby+kiddo and with miracle noodles for me.

I used a julienne peeler on squash, -> toss in a bowl. I used coleslaw (cabbage only) -> stir fry with minimal EVOO -> toss in same bowl. +/- shredded celery

I boiled the noodles separately and added to the bowl.

Dressing - shake following into a shaker/bottle.
1/4 Cups Sugar - substitute with splenda!
1/4 tsp. Salt
1/2 tsp. black pepper
1/3 C Light Seasoned Rice Vinegar (0 carb one).
2 tbs Extra Light Olive Oil (I use even less)
1/3 C Cider Vinegar
2 Tbs diced fresh Ginger
1 diced Jalapeno (optional)
2 Tbs Light Soy Sauce

I poured some of the dressing on top of the salad/noodle mix and let it stand for an hour or so in the fridge (which is great, because the miracle noodles soak up the dressing). I made a large batch of dressing to use with salads next day - it is sooo good. Acidic so your mouth stings a little later, but all worth it!

I'm getting in a dinner rut so I'm bumping this up for inspiration!
Tonight I'm going to mix up some italian seasonings in hamburger and roll it into meatballs, bake them on top of diced tomatoes. Probably will eat on top of zucchini spaghetti. DH will have real noodles of course (and garlic toast) :)

i had to scrambled eggs with cauliflower rice and bell pepper mixed in with a slice of veggie cheese was quiet yummy!

Grilled chicken breast seasoned with garlic powder and Montreal chicken seasoning. Salad of zucchini, yellow squash, baby cucumbers and mushrooms with red pepper flavored evoo, and sea salt.
