I'm sure it is a surprise to no one that taco salad is amazingly delicious. This is not an earth-shattering revelation of a post, more a "I am proud of my dinner I wanted to brag because it is SO FREAKING TASTY" post.
I used to eat my taco salad loaded with shredded beef, cheese, and sour cream. Man was it good. And unhealthy. Tonight, I made a HEAPING taco salad for 484 calories. This thing is massive.
2/3 cup baby spinach leaves
1 cup iceburg lettuce
1 cup homemade pico de gallo (red onion, tomato, fresh jalepeno, cilantro, lime)
2/3 cup fat-free refried beans
1/4 of an avacado
2 tablespoons taco sauce
1 ounce tortilla chips
a bit of chips got crumbled on top, the rest consumed with the pico that didn't go on the salad. Let me tell you, it was amazing. It was at least as good as the fattening version, better even, because I'm not only full but really pleased with myself.
