Does anyone want to try this one out sometime in the next week? If it's good, we'll add it to the recipe section. I plan on it on Sunday - hope it's good!

Awesome Cheesy Chicken

6 boneless chicken breasts, browned in butter or olive oil
1/2 cup chopped onion
1 cup chopped celery
8 ounces fresh (or 4 oz. canned) mushrooms
1 clove garlic, minced
salt and pepper to taste
1/2 cup heavy cream
1/2 cup mayonnaise
1/4 cup parmesan cheese
1/4 cup sour cream
8 oz. shredded cheese (your choice) I used colby/monterey jack blend


Place browned chicken breasts in bottom of a greased casserole dish big enough to hold them. Brown onion, celery, fresh mushrooms (if using fresh, otherwise just add canned mushrooms when other veggies are browned) and garlic in additional butter or olive oil; pour over chicken breasts. Salt and pepper to taste. Mix remaining ingredients together in a medium bowl and spread over top of chicken mixture. Cover tightly with aluminum foil and bake at 350 degrees for 1 hour.

Oh this sound's soooooooo yummy:cool: I'm going to try this one this week end for sure. I need something new to try.

Thanks for the recipe Ruth. How did you know I had a package of chicken breasts sitting in the frig begging for a new recipe, instead of the same old same old.

Must admit I've not tried it or done the nutritional count. I'll do it before I try it.
