Atkins - Your favorite Atkins meal?

I am testing out new recipes and im having a time finding some I really like so far!
I love my steak with mushrooms and onions all on top YUM
But I tried to make a Portobella mushroom pizza and I didn't care for it!
I made a stir fry with snap peas and other veggies and some how my veggies were mushy and not crisp like I like!!
So what is your favorite Atkins meal?

I love chicken and veggie stir-fry. I also like making parmesan breaded nuggets/strips and taco salads. I use commercial taco seasoning which isn't specifically allowed on Atkins because it contains thickeners, but you can make your own which is just as good. My taco salads are usually a big bed of lettuce topped with 4oz seasoned ground beef, cheese, sour cream, peppers, olives, and hot sauce.

Would love to hear more here..I'm trying to get a grocery list going b/c I want to have all I need in the house for this diet. I'm doing well, but only on day 2. Any advice would be great!

You could make chicken packets, which are chicken with vegetables and seasonings wrapped in foil and then baked or grilled. I've never tried these but they're on my must try list!
Meatloaf is a staple and so easy to make low-carb. You can add a little bit of cheese to replace the bread crumbs.
Wal*Mart's Great Value brand makes a great alfredo sauce that has only 3 carbs for 1/4 cup. I like to make a lot of chicken and pour the sauce over along with canned mushrooms just like you'd prepare chicken fettuccine alfredo. I eat it without the noodles of course and just have a side salad. It would be good served over broccoli too.

I've tried both and they're delicious!
My mom makes a soup by simmering stew meat, beef broth, zucchini, squash, green beans, and some other veggies. She's also made cheese-stuffed meatballs, which were really good. All you do is cut string cheese into sections, season and mix ground beef the way you'd normally prepare meatballs, and then wrap the meat around the cheese chunks and bake or cook in a skillet. I ate these simmered in homemade spaghetti sauce (made from tomato sauce that contains no sugar, check labels!) and then served over spaghetti squash instead of noodles. Mmm.

Wow Linsy..thank you SO much! :) I'll be shopping tomorrow and will look for some of those things. Any suggestions for desserts?? I know I should stay away from sweet stuff b/c of cravings, but any ideas for a small dessert snack after dinner??

I love Heroin Wings, spinach salad with red onion, cucumber, and bacon. Serve with bleu cheese or ranch dressing...YUM!

There's some recipes for desserts in the Recipes From What's For Dinner? thread. The cheesecake muffins I can vouch for being really good, and you could try the hot chocolate if you like warm drinks.

Be careful with the sugar-free jello. It contains aspartame which can cause a stall. When I stopped eating aspartame I started losing weight much easier.

Made Meat-izza tonight for dinner, got it from an Atkins cookbook. ground beef various different spices for the crust top it off with mild salsa, mozzarella and parmesen cheese. sooo delish!

Favorite meals: brown-butter, pan-grilled steak with a salad and a side of bacon-wrapped asparagus. Deluxe goodness!
Flounder Oscar - grilled flounder topped with crab, asparagus, and hollandaise. This is what I order at my favorite around-the-corner restaurant when I'm feeling flush.

I don't really have a favorite dinner (breakfast is usually a 3-egg scamble with onions and peppers garnished with a little salsa, lunch is a large salad w/EVOO + parm plus a chunk of chicken or beef on the side).
My dinners have been pretty straightforward -- meat + veg. Either separate or in a stir fry. The great thing about Atkins is that I don't have to stint on the fat so I don't have to fuss over it to get it to taste good. Sesame oil or butter, cracked pepper, maybe a little soy sauce and I'm usually good to go!
Add a few snacks of cheese, nuts or part of a one-minute muffin that's pretty much what I've been eating the last few months (and quite happy about it!).

I make an asian stir fry using beef, cauliflower, jalepenos, celery, jicima, garlic, and red bell pepers. The vegiies stay nice and crisp.
Also, the cauliflower soup is a fav.
And grilled sirloin with a great salad.
I make all of these pretty often.

I'm having one of my favorite meals tonight: oven-barbecued baby back ribs and collards. I love the "Glory" brand collards, Southern deliciousness, just heat and eat.

mine current fave is tbone steak and huge spring mix salad loaded with bacon, candied pecans or walnuts (be careful), and feta cheese with red wine vinaigrette.

Right now, I just like simple things like a well-cooked steak or dry-rub ribs. I also like steamed or sauteed veggies :) I need to try some more recipes and find new favorites!

I love turkey burgers, seasoned well ... with a side of cucumber, sour cream and onion salad. MMMM :)
