Default Salsa and Bison?

Okay so I just went to the store. I saw a thread on here where some consultants say salsa is okay as long as it's fresh salsa. Does anybody know if "fresh" salsa is considered salsa that I would make myself or is the salsa you can get in the deli section considered fresh? The Deli section salsa is not in a jar? Second, I bought my first package of ground bison and I would like some re-assurance that I didn't just waste my money. Does it taste good/the same as ground beef or what can I expect from it? Thanks in advance for your input!

Bison is amazing! The steaks are the best...like 100 calories for the whole thing, insanely lean.

Don't know the answer to the salsa question, but packaged salsa usually has a lot of sodium. The stuff you find in the deli will probably have as much (if not more) sodium.

Bison is wonderful! Make sure not to over cook it. It tends to dry out. Sam's Club's fresh salsa has 50mg of sodium per Tbls .. which is very low sodium compared to other salsa in a jar.

We prefer bison over beef. It has better flavor. Cook the ground beef like normal....but steaks, cook medium rare/medium as they dry out when overcooked.

For the bison, I have found a little black pepper and garlic powder to enhance the flavor wonderfully.

As for the salsa, I used jarred salsa sparingly on program. Make your own if you want to use a lot. Its not hard. In fact, my husband's uncle makes TONS of fresh salsa all the time, and he is making his next batch salt free for us!

I was told in the shopping class, that the fresh stuff from the deli is ok if you make sure they don't steam the tomatoes and it uses green onion instead of white or yellow but it does have extra salt in it. If your body handles the extra salt ok then go for it. Mine doesn't so I have to make it fresh everytime. The one thing you need to ask about though is if they steam the tomatoes. If they steam the tomatoes for cleaning purposes, then they have already started turning into sugars. If you are sure they don't steam the tomatoes then it is on plan!

Mmmm - bison. Between that and elk, I eat that almost every day. Even when I'm not on program. I try to avoid red meat like the plague.
