personally, I LOVE ww.. it gives me such flexibility with my lifestyle. As far as planning, I'm not a planner, never have been so meal planning is not my strong suit.. I eat alot of frozen meals becuase I hate cooking and my busy schedule doesn't really allow for much cooking either so it works for me and the best part about ww is that it allows for people like me to eat how I need to and still lose weight, perfect scenario, lol. But your idea of cooking one day and freezing for meals throughout the week is great! Will save you time for sure during the week
And if you change your mind, that is ok, what I do is just mark my kitchen/food items with a permanent marker of the point values so I can see them anytime I open my fridge or pantry so if I want to change my mind on what I'm eating for dinner I can see what will fit into my pts without alot of fuss, but you'll definitely find what works for you. I say give it a try and see how you like it, sounds like your dad will already be your support system and that is a good sign for success!
