South Beach Diet - Escarole?!

Mmmmm....I had forgotten about my dear escarole! I was browsing some recipes on Kalyn's Kitchen, and a recipe reminded me of it. I don't know what it is about it, but I really love it!

Care to share some favorite recipes and feed my addiction?

I love it in white bean soup with lots of rosemary.

Ilove escarole, especially in soups. It's a vital ingredient in Italian Wedding Soup, with the tiny meatballs, diced chicken, and orzo. I love it braised with cannellini beans and lots of garlic, and I sometimes add it to spaghetti sauce, too.

Now I want Wedding Soup for breakfast. I have put escarole on my list for my next big produce shop in town.

I just picked up some escarole! Now, for my big plans...
