I've been "re-inventing" all my favorite pasta salads using bean sprouts for the pasta. I steam the sprouts in my microwave steamer for 4 minutes (your's may vary in time), rinse them in cool water, and substitute them for noodles. I've adapted spaghetti salad, an oriental noodle salad, and several other recipes. Works great!
