View Full Version : Delicious Seasoned Mahi Fillet

If using frozen fillets make sure you either thaw them properly either via overnight refrigerator or in the sink under cold water for 20 or so minutes.
Pat the fillets dry with a paper towel before seasoning.

In a medium sized frying pan add enough canola oil to coat the bottom and leave it on medium heat (you'll be shallow frying).

In a shallow bowl or plate combine:

2 tbs. Coriander
1/2. tbs. Garlic Powder
1 tsp. Cayenne Pepper
1 tsp. Paprika
dash of salt

then add and combine 1/4-1/3 cup wheat flour.

Pat the all sides of the mahi in the seasoning mixture. It will stick to the mahi naturally, there's no need to brush the fish with oil or anything. This seasoning works for any fish, I've only used it on mahi and my DW loves it!
The outside is nice and crisp while the inside stays flaky and moist.
If you don't want to fry you can bake the fillets in the oven on a baking sheet instead and they're just as good.

This seasoning recipe is for 2 fillets and can be easily adjusted to make more.
I usually serve a side of green beans or broccoli with this. It's really easy and really good!

This sounds like a great recipe, but a word of caution - "wheat" flour is usually just another word for plain white flour. Make sure you use whole wheat flour when making this to keep it SBD compilable.
