Desserts - Induction-friendly gelatin with fresh lemon juice

Boil 1 1/2 cups water.

While water is heating, mix in a Tupperware/Rubbermaid container:

Juice of 2 lemons
1/2 cup water
1 teaspoon Stevita stevia powder (could use more if wished)
2 packets Knox unflavored gelatin (or .5 ounce by weight, if you have the large container)

Stir mixture until gelatin granules are completely dissolved. Let it start to congeal. Pour in boiling water. Let cool. Put lid on securely.

Put in fridge. Can eat in a few hours, but will be firmer if left overnight in fridge.

Can be eaten on Atkins Induction.

Stevia has no carbs and as far as I know, does not raise blood sugar.
