Default Eggplant parmesan recipe for the calorie conscious.

I made some eggplant parm yesterday and sort of winged a recipe going off of the old greasy way that I use to make it and it turned out great so I thought I would share with you other calorie countin peeps.

The entire pan had a total of 1040 calories and I took 1/4 of the pan as a serving which was 240 calories, and honestly if it were cut into 6ths the portion would be enough and that would come out to 175 calories per portion. anyways, here is the link to my blog where its posted and a picture of the finished product.

You can see how big a portion is for that 240 calories and my whole family loved it, even my picky 4 year old daughter

OMG I love you, Eggplant Parmesan just so happens to be the best thing on earth! >.<

Heh, I am such a huge fan of Italian food, it's been painful seeing the calorie counts on some of my favorite dishes, but you just made my day!

This looks awesome, even with my longstanding hatred of eggplant! I might give it a try or maybe sub the eggplant for zucchini... hmmm...

I can't say I have ever tried eggplant. I have tried zucchini and didn't care for the texture. This looks like something worth making, thanks for the recipe.
