Just thought I'd share a new way (for me anyway!) of cooking eggs. We have chickens, which is nice because I love eggs, but I knew starting SB would be a challenge because I love eggs with some kind of toast or biscuits or pastry. I hoped I would get creative and discover ways around that bad-carb pairing . . . and yesterday I did:

Eggs Poached with Black Beans and Tomatoes

1/4 c. chopped onion
1 t. olive oil
1/2 can black beans, rinsed
1/2 tomato, chopped
3 eggs
s/p

In a sauce pan, saute the onion in oil until soft. Add beans and 1/2 c. water; bring to a simmer. Stir in tomatoes, drop in the eggs, and cover. (Add a little more water at this point, if needed.) Simmer for 5-10 minutes, depending on how you like your yolks. Season to taste.

The beans made a nice sub for bread. This was VERY filling. I'll probably cut back to two eggs next time. But I can see so many variations of this in my future!

That sounds so tasty! You could spice it up so many ways too, very versatile.

Sounds great, Sally! I would add a little salsa myself, too! I used to raise chickens and loved the fresh eggs!
