OMG, I made these tonight and they are FABULOUS!!!

For this recipe you can either use the pre-packaged frozen phyllo dough shells OR you can buy regular phyllo dough and make the shells yourself. I bought organic phyllo dough at a natural food store. Using 4 sheets of dough, layer them on top of each other, spraying each sheet w/ butter flavored cooking spray before putting the next sheet on top of it. Cut the stack into thirds lengthwise and then into fourths across. Spray a mini-muffin tin w/ the butter flavored cooking spray and place dough in each space (as shown above). Bake for approx 5 mins at 350 degrees.

For the filling you can use instant sugar-free pudding OR, if you're in a rush, the pre-packaged cups of sugar free pudding. Spoon pudding into each cup, filling to the top. Top w/ a squirt of fat free whipped cream and place 1 almond on top.

I froze them afterwards...they are yummy!!!

Unless you are making these with whole wheat phyllo, they aren't SBD friendly.

They do look divine, and I bet they do taste wonderful, though.

I've seen whole wheat filo....not often, but I have. What about using whole wheat puff pastry shells? those are much more readily available. If you can't find puff pastry, you can make it....though it's incredibly time consuming. delicious, but time consuming.

I used organic whole wheat phyllo dough. You can go online to and find retailers near you. They also sell pre-packaged frozen shells which would probably be a WHOLE lot easier, but the store I went to only had the sheets of phyllo.

I know, right??? I didn't think I'd be able to find it, but it was pretty easy. :)

It was a little challenging here but it looks like there is one place near the Trader Joe's we go to. Most of the stores listed had other products but not that. I can't wait to try some! Thanks for sharing the find :)
