OMG!!! I have been staying away from weighing myself b/c I think that people tend to get wrapped up in the numbers and get discouraged while dieting. But today I had my follow up appointment w/ my doctor and they had to weigh me. I was SO worried the scale wouldn't show what I knew my waistline had been showing...but I was worried for nothing.

45 POUNDS!!! My doctor was so impressed that he actually said I have inspired him to try Southbeach again!!! 16 more pounds and he's going to lower my blood pressure meds. His goal for my BP was 140/ my BP was 122/70!!!

I am so frigging happy right now I can't stand myself. Thursday is my birthday and I am SO not even caring about not eating birthday cake this year. Whoooooo frigging hoooooooooooooooo!!! :D

I've been on South Beach since just a little over 2 months. I had actually already lost 13 pounds before, so we're looking at 32 from SB alone. :)

Seriously, this website has been a great inspiration for me. Looking at all the photos and the transformations...and hearing some of you say "If I can do it, anybody can!" has been a big help for me. I feel so much better about myself and I can't wait to keep going and keep losing. When I reach my goal weight my present to myself will be a 2 week trip to NYC where I can walk all I want w/o my feet killing me!!! :)

Since tomorrow is my birthday I had made up my mind to go out and have Thai food (one of my favorites)...but after looking it up online my faves (Pad Thai Chicken and Lumpia) are FULL of sugar and carbs. So instead I'm gonna stay home and enjoy a grilled steak and a salad w/ some zucchini puffs for a side. :) And for dessert??? This low-carb cheesecake:


* 3 packages (1 and 1/2 lbs) cream cheese (room temperature)
* 4 eggs (preferably room temperature)
* 1 and 1/2 teaspoon (1/2 Tablespoon) vanilla
* 1 and 1/2 teaspoon (1/2 Tablespoon) lemon juice
* 1 and 1/3 cups sugar equivalent of artificial sweetener (I like zero-carb liquid sweeteners for this recipe)
* 1/4 cup sour cream
* Crust:
* 1 cup almond meal
* 2 Tablespoon melted butter
* 2 Tablespoon sugar equivalent in artificial sweetener

Heat oven to 375 F.

Tip: If you have bricks or a pizza stone or unglazed ceramic tile*, put them on the lower rack of the oven. This will hold the heat in the oven. This is good for cheesecakes not baked in a water bath. (Well, actually, it's helpful for any kind of baking, as it keeps the heat in the oven more constant. I keep a pizza stone in the oven most of the time.)

Combine ingredients for crust, and press into the bottom of a springform pan. Bake for 8 to 10 minutes, until fragrant and beginning to brown.

Raise oven heat to 400 F, or lower to 350 F if you're using a water bath (see below).

Put cream cheese in mixing bowl, and beat until fluffy. Add other ingredients, scraping the bowl and beaters each time (this is very important), fully incorporating each ingredient. When all ingredients are combined, scrape one more time, beat one more minute, and pour mixture into pan over crust.

Instructions for water bath: Wrap the bottom and sides of the springform pan in foil, put it in a baking pan and pour boiling water around the sides. Bake at 350 F for 60 to 90 minutes, checking often. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.

Instructions for non-water bath: For this method, you start the cake at a high temperature, and it slowly drops. If you have stoneware, bricks, etc, this allows it to happen at a slower rate, and I get better results in less time. Put the cheesecake on a sheet pan in case of drippage. After putting the cheesecake in the oven at 400 F, turn the oven down to 200 F. Bake for 60 to 90 minutes, checking often after an hour. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.

Chill completely. Top with fruit, if desired, such as Sugar-Free Strawberry Topping.

Makes 16 servings.

Thanks!!! :) And, for the record, the low-carb sugar-free cheesecake was FABULOUS!!! I found it online at a low-carb diet website. I don't think non-low-carbers would know it was different than regular cheesecake unless you told them. ;) My nephew LOVED it. I can't find almond meal around here, so I just ground up some almonds in my ninja and used that. It was GREAT!!! :)

Tee hee!!! I tried on my TDU pants that I wear for SWAT today. At my heaviest, these pants were SO tight that the button would pop open when I sat and bent over. They are now LOOSE...yayyyyyyyyyyyyyyyy!!!

I've been debating whether or not to come post a new picture in this thread b/c I keep feeling like it's too much like I'm patting myself on the back or something...but then I figured if I can share it w/ ANYONE you guys here would be the ones that would understand. So...I took a picture while working our mock drill on Tuesday and I realized that you can see my face is thinning out in the picture. So I did a side by side comparison.
