6 chicken cutlets.salt and pepper 1 cup mayonnaise,1/4 cup fresh lemon juice, 2 garlic cloves(minced), 2 scallions, chopped , include the green firm part. salt the chicken lightly, and rub in on both sides. next mix the remaining items in a small bowl,spread the mixture onto the chicken, coating both sides. let it marinate for 2 hours in fridge. Preheat oven to 350. place the cutlets on a foil lined pan, bake for 20-30 minutes till brown and crispy. To get extra crisp. pop them under the broiler for a min or two. Less than 1 gram each.
