Default I know this probably belongs on Recipe Page but I really wanted to share!!

Tonight was Taco night at my house. My BF loves the ground beef, cheese, sour cream, white flour tortillas. I love the flavors but not the calories so I improvised.

I made him his ground beef taco filling and then scooped out a small serving for me (about a half cup of very lean ground beef with taco seasoning)...to it I added a chopped zuchinni and a cup of sliced mushrooms, I threw on a 1/2 cup of salsa and stir fried it with Pam. The zuchinni and mushrooms cooked down with the salsa until it was like a taco veggie sloppy joe.

I put that in a half a pita with a dab of plain yogurt, just a tiny sprinkle of cheddar cheese for the flavor, sliced green onions and a chopped tomato. I didn't add the calories but I had two of those very filling pita "taco". I'm guessing it came to under 400 calories as it was mostly veggies. It was SOOOO good!!

Actually taco shells are waaay less calories than pita bread.

I make something similar. I make a taco salad. I use the taco seasoning and cook chicken breast instead of beef. I cut up a huge salad - shredded lettuce, red onions, grape tomatoes, diced peppers, etc. I put it on a plate, top it with the chicken which I shred, pour on some taco sauce and I crumble a taco shell over it. DELISH!

When I make my "tacos", I brown the ground beef, drain, add seasonings, a can of Rotel,a can of beans (either chili or black beans) and some water--let it cook down/shimmer. I then add shredded cheese, my filling and greek yogurt on a tortilla. Super filling and yummy! The addition of zucchini sounds good too. Sometimes I add spinach to mine as well.

I think one or more of these ideas may get combined for taco night at my house tonight! My pregnant friend is craving mexican constantly, and I've been looking for ways to make it here without it being overly fatty!

My BF likes the white flour soft tortillas which are 120 calories for one 8 inch tortilla. The pita I buy is 124 calories for about an 8 inch pita that I cut in half, making each of my "taco shells" only 62 calories vs. 120.

I don't know I never think of the hard taco shells...I'll give those a go next time.

I love the pita idea! Great one.

I know what you mean about soft shells though. Too high in Calories.

I buy the regular Old el Paso corn taco shells.

160 Calories
7 g Fat
1 G Fiber
...
...
for 3 shells!!

that is 53.3 cal each, 2.3 g fat, .3 fiber each! Not to shabby if you want the crunchy taco experience.

and a tip, if you have a Pizza Pizazz, you can send them for a spin for about 5 min and the crisp up just as if they were fried!

mmmm love the taco taste! i brown up extra lean ground beef & ground turkey with the seasoning, and put it in baggies in the freezer for when the mood strikes! lately my favourite way has been a big old salad with kraft lite balsamic (i'm loving that these days!) and sprinkle in the meat, and add a small handful (about 5 or 6 chips) of crushed up Doritos! It tastes like a million bucks!
