Food Talk And Fabulous Finds - Allergies and trying to eat healthy ?!?!

Hi!
This is the first time I'm posting a thread! How exciting.....
Well, I've been eating 'healthy' for about a month now, but I'm starting to get sick and tired of eating the same kind of food almost every day :dizzy:
Due to my allergies I have a hard time trying to find something to eat which I havent eaten the day before and so on and so forth. I need some variety!

I was hoping that perhaps some of you could 'inspire' me and help me out here because I'm really frustrated and feel discouraged.

My allergies: Avocado, peach, apple, kiwi, pear, nuts, sunflower seeds, almonds, carrots, mushrooms, milk, soy milk, eggs, honey,......

Oh, I should probably add that I'm currently trying not to eat any pasta and bread (even small portions make me very tired).

Any idea or suggestion will be greatly appreciated :) Thank you!

Do you have any cookbooks? Do you have access to a library with cookbooks? How about perusing blogs or even recipezaar.com?

With the exception of apples, the things you listed are things I eat rarely or not at all.

If you want a 'milk' type product, you may be able to buy or make oat or rice milk or from any nuts you can eat.

One of my favorite blogs is blog.fatfreevegan.com and I always get wonderful ideas from there.

That's a lot of allergies! :( "Milk" is a bit unspecific, though. Is it only milk, or anything made from milk? Is it lactose intolerance? Because lactose-free products are widely available. Or is it the cow protein? Then you could still get milk, joghurt and cheese made from goat's milk.

As you are studying in Germany, I guess you speak German? Because then it might be worthwhile to check out Libase (just google it, I'm not allowed to post links yet), they started out as a board for people with lactose intolerance, but now cover all kind of food intolerances and allergies. They have a lot of information on there and yummy recipes as well.

I eat a lot of beans and lentils and chick peas, they keep me really full, and they are a great source of protein. And they are cheap. :D
Lentil or bean soups are great for cold days (which somehow are still here...) and a can of chick peas with some tomatoes, cucumber and a light dressing is a fresh lunch on warmer days.

I've had a number of food intolerances which luckily enough were only temporary and vanished when I started watching what I eat. So I'm pretty experienced in making dishes without many common ingredients. And I'm happy to help, all the more because being in the same country we won't come up with anything that you can't get here. ;)

Plus I get really tired from refined carbs as well, so I've cut out pasta, rice, sugar and potatoes and only have wholewheat bread for breakfast. I'm still working on my food plan (I'm searching for 10 low-carb, healthy dishes with lots of veggies that my husband agrees we can have for dinner again and again and again), and I'd be happy to share those which would fit in with your allergies, as well.

Yep, I do speak german so I'll have to check out Libase. It sounds interesting.

There is a magazine called Living Without that caters to the most common allergies which will have lots of gluten, dairy, egg, nut and soy free recipes. They also have a website I think.
