Can cut, raw sweet potatoes be stored in the fridge in cold water and not turn brown for just 24 hours?

no they wont brown but it gets rid of some of the starch

Could change the flavor. I know white potatoes don't handle refridgeration well (raw).

If I'm not mistaken, you can freeze them.. not in the water of course. Maybe that is an option?
