Taco Bake and Crack Slaw are my top two favs! I really like the P1 friendly breakfast casseroles from Kalyn's Kitchen website, but I wouldn't freeze them. I use egg beaters and throw in anything that I have on hand; usually misc veggies and LF turkey sausage. I absolutely love freezing soups especially the bean and lentil varieties.
Ate the Taco Bake tonight. I also love the crack slaw, stuffed peppers, deep dish spaghetti squash pie or just sauteed chicken breasts with lots of veggies (like chicken cacciatore) with NSA spaghetti sauce and a little cheese on top.
Taco bake freezes really well too! I have a few in my freezer right now for busy nights.
Spicy beef casserole with mock cornbread is a family favorite.
Crack slaw is one of my favorite things to do with leftover meat. It doesn't freeze well, though. You could cook and cut up the meat and freeze that, because the meal comes together in 10 minutes.
