20-Somethings - ICE CREAM! (kind of)

Sooo I'm craving ice cream, but it tends to land right on my hips, thighs, lovehandles, you name it. :) I'm trying this new banana recipe. The author and the people commenting seem to think it's amazing. We'll see. I'm not a fan of bananas, but it's mostly a texture thing, so maybe an ice cream texture will be more appetizing. I'm adding in a tiny bit of soy milk, cinnamon, splenda, and 2 walnuts to help trick myself into thinking it actually IS some foreign cousin of ice cream. Has anyone else tried this?

Havent tried this, but am super glad i bought more bananas than needed this week =] im off to throw a few into the freezer now. maybe ill have some banana "ice cream" for breakfast!
plus i must say, your take on it, with the addition of the walnuts soy milk, cinnamon, and splenda made me think of a distant cousin of a butter pecan type ice cream.

I'd recommend it guys. I just tried my first experiment and it's actually good. It has the creamy consistency of ice cream. Yes, it still tastes like banana, but the cinnamon definitely added to it. Honey might help, but I'm trying to avoid adding lots of unnecessary calories.
One thing though... re-freeze it after you blend it. Its better that way. :)

thanks for the refreeze tip! Im gonna try just banana the first go around, and if i think it needs extra the next time ill play around with different things. =] Thanks again for the idea!
I just got an idea..maybe id add some shredded coconut, for a somewhat tropical flavor.

I never thought of eating it that way. I use frozen bananas for smoothies, but this sounds like a good desert!

I made some today and It was delish! I love banana and the idea of banana ice cream sounded great. I made mine with 2 bananas I froze cut up and added a teaspoon of peanut butter and a teaspoon of homemade chocolate syrup (with splenda,and coco powder) I made , and a splash of skim milk to make it smoother. Turned out great! Even my nephews and brother in law liked it and there against anything "healthy"

I used one and a half bananas and it made a little more than a cup. I didn't measure it, but I have some small glass cups that I fill with 1 cup of soymilk when I'm using that as a protein, and it filled the glass to the very top. I think if I was trying to figure out portion sizes for more than one person, I'd figure one banana per serving. It ended up being a lot more filling than I was expecting.

I did this today and it was yummy. I used two bananas but I think that was enough for two servings. I used a food processor but I'm pretty sure a blender wouldn't be a problem. I added a little splenda and cinnamon to mine :)

Totally gonna have to try this!!! PB and banana is one of my favorite combos EVER, in fact, my lunch today was a PB and banana sandwich on wheat. :)

I read that if you have a blender that will chop ice in smoothies you can use a blender for it. A blender might be more ideal if you were using more than 2.5 bananas. My food processor was about half full with 1.5.

Sometime I really hate being a college student with a lack of cooking instruments. I definitely want to try this, going to have to wait till I'm home in the summer though!

i froze my nanas last night like i said i was and couldnt wait to make this this morning. i used a blender..although i think a processor would have been easier.
i used two LARGE bananas, and cut the up, and peeled them. and me not being the brightest person in the morning..i put it all in my blender and turned it on. obviously there wasnt much movement in there. so i removed most, and used like a half a cup of almond milk to get it going. as it blended i gradually added more bananas and it turned out fine.
i put it back into the freezer and let it set up..although ever few hours ive been taking it out and stirring it. my freezer is stock full of frozen meals so i dont think its not freezing right away because of it.
it seems fully frozen as of last time i checked. tastes really good too =]
i also must say..i nearly froze my fingers off cutting and peeling them! i good tip i found was to cut them and let them sit for a few seconds..maybe a few mins so the chill comes off a little. it makes it MUCHHH easier to peel the skins off.
although i didnt use but a half cup of almond milk (30cals) i think next time i shall try loosening it with water and see if there is any difference in flavor..if not..ill just use water from now on.

JackieL- Its suggested in the link to peel and cut the bananas first before you freeze them that way they are smaller pieces and easier to blend and you don't freeze your fingers off peeling a cutting them up :) Hope that helps

I'm planning to freeze a couple of bananas today at lunch and have this for dessert tonight after supper. I was going to wait 'til Friday, but I don't want to wait that long so I'm squeezing it in today!!

I froze some bananas last night and made this for my kids for breakfast. It was YUMMY!! They all got a kick out of seeing the banana turn into ice cream and they inhaled it. We added a tablespoon of natural peanut butter, and we already have more slices freezing to try it with Nutella for desert tonight.

I'm really excited to see the combinations of ingredients everyone comes up with. I think there are so many possibilities. It really is amazing that a yucky looking frozen banana can turn into something so yummy. Last night I finished off the rest of the walnut/cinnamon batch I made earlier in the week and it tasted even better than I remembered from the first time around.

just had this and WOW was it good.
i did one banana, a little bit of vanilla almond milk, cinnamon, and about a tablespoon of maple syrup.
really, really good.

I had some yesterday evening and....well....not sure what I had in mind, but this didn't live up to my expectations at all. It was ok, but I had more of an "ice cream" consistency in my head, which is pretty much not even possible since they're bananas...

I'm with Mindy on this.... I think I was expecting something else and wasn't that impressed. However, I did put it in the freezer after I made it so I'll see how it is tonight after being refrozen. Maybe then it will have more of an ice cream consistancy.

I refroze it for about two hours before I actually ate it...maybe more milk to thin it out would have helped?
It was cool, though, seeing my chunks of banana turn into a creamy texture all of a sudden...

I'm going to try it... although I love my fat-free 90 cal breyers ice cream...but I think this might be fun to try - And I'm thinking of scooping it on top of my warm peanut butter fudge vitatip - sounds like a dream really!! haha

I'm not sure it will actually be able to compete with actual ice cream, but considering the fact that a frozen banana can turn into a sweet, creamy, dessert-like treat is pretty fascinating to me. :) I had to keep in mind that it would still have a banana taste since I'm not all that much of a banana eater to begin with. For my diet it's really nice because I can have this and not use up any starches or dairy for my day. I get limited amounts of those, and I generally don't crave fruit, so this is a good alternative especially if the fruit at the store looks a bit icky.
