Cheesy Herb Omelet
I use this recipe often and it's perfect for my plan (I'm on Food Lovers Fat Loss otherwise known as FLFL). Enjoy!
Cheesy Herb Omelet
Fresh chives cover this tender goat cheese omelet aside some grilled zucchini and red peppers to wake you up in the morning!
Ingredients:
• 2 slices toasted whole wheat bread
• 6 egg whites
• 1 TBSP water
• ¼ tsp freshly ground black pepper
• 1 tsp chopped parsley
• ½ tsp chopped tarragon
• ¼ cup Trader Joe’s® crumbled goat cheese (or your preferred brand of goat cheese)
• Non stick cooking spray
• ½ cup thinly sliced zucchini
• ½ cup julienne-cut red bell pepper
• 1 tsp chopped chives
Method:
1. Combine eggs and 1 TBSP water in a bowl, stirring with a whisk. Stir in 1/8 tsp pepper. Combine parsley, goat cheese, and tarragon in a small bowl.
2. Spray a skillet with nonstick cooking spray over medium heat. Add remaining pepper, zucchini and bell pepper to pan. Cook for 4 minutes or until tender. Remove zucchini mixture, cover and keep warm.
3. Spray skillet with nonstick cooking spray again. Pour half of the egg mixture into pan and let mixture set slightly, but do not stir. Carefully loosen set edges of omelet with a spatula, tipping the pan to pour uncooked egg to the sides. Continue this procedure for 5 seconds or until no runny egg remains. Sprinkle half of cheese mixture evenly over omelet and cook for 1 minute. Slide omelet onto plate and fold. Repeat procedure with remaining foods. Sprinkle chives over omelets; serve with zucchini mixture and 1 piece of toasted bread.
Serves: 2
Recommendation: To make a Fat Loss Plate serve with an extra slice of toast with TBSP of butter (i.e., Almond, Peanut) and jam.
Approximate nutritional analysis per serving: 242.5 calories ( 18.5 grams of protein, 23.9 grams of carbohydrates, 7.4 grams of fat, 3.9 grams of fiber).
