That's right! I cooked an all veggie meal last night and lived :carrot:

I made Southwest Spaghetti Squash. It was the first time I ever cooked spaghetti squash...not the first time I ever cooked an all veggie meal though ;) In fact last week I made a Hearty Vegetable soup that was quite delish :T

Angie and I both liked it and I lived through it ....imagine that...a meal without meat :)

I took some pictures too...

# 1 ~ Traditional tearing of the squash # 2 ~ 1/2 way through decorated with tomatoes, black beans, cilantro, spices...:cheese: cheese yet to come :cp: # 3 ~ What it is supposed to look like # 4 ~ What mine did look like :) and finally # 5 ~ My :censored: mess!

lol!!! Love the B & A pictures!!! Omg, that dish looks tasty! I was vegan before, and I absolutely love spaghetti squash. You can also cook it straight in the oven if you cut it in half and turn it upside down in a little water. It gets steamed kind of. It is so delicious.

Gary, a couple of comments and a question ? Question first, when do you add the Coors Light ? Comment next, it looks delish but I think the addition of cheese knocks it out of the vegan ballpark.

It was good and tasty JEN. Not sure on vegan rules but I think if the cheese was removed it would still taste great.

JULIE by the time she got home there was zero beer leftover!

Gary, a couple of comments and a question ? Question first, when do you add the Coors Light ? Comment next, it looks delish but I think the addition of cheese knocks it out of the vegan ballpark.

I starting adding the Coors Light around 3pm...an hour before I started cooking anything ;) The cheese does knock it out of veganland but I was looking for veggie and I think Jen just meant when she was eating vegan she had spaghetti squash a lot.

Ya, the ever present beer can!

Your dish looks yummy, no matter what the cookbook looks like.

Thanks ANNE...as I am sure you all have guessed...the beer can is a prop...you know....my "signature" just in case I ever get famous copying others recipes and posting them with middle of the road pictures :D

:carrot: OK...We had leftovers of the dish...Angie took some for lunch and saved some for me. My sister came to visit, she has breast cancer as some of you know...anyway she is doing chemo and has trouble with some smells/tastes/etc. She was hungry so I had her try my leftovers...she has never been a big eater...I had a MAN SIZE bowl that I warmed up for her...she ate the whole thing :carrot: loved it!!!

Who's da man?...I'm the BIG BROTHER!!! ;)

LORI Angie watches GLEE...I have seen bits and pieces of it...not quite sure yet what to think of it...thank goodness there had been ballgames on that I was allowed to watch in the family room...

URTHWURM I make a killer spinach lasagna...the only time I made a vegetable lasagna it was lousy...I didn't use a recipe I just winged it...that bird couldn't fly! Let me know how yours turned out!

I made stuffed cabbage yesterday...very good....I don't stuff, I layer the cabbage over the meat balls....

yep...there is that word 4 letter word "meat"....hence no pictures of it...

working on more veggies...less meat...progress

Speaking of veggie lasagna, Cottagebythesea makes a killer butternut squash lasagna! It's South Beach friendly - lowfat ricotta and mozz, with roasted and sliced butternut squash in place of pasta. DELICIOUS. I ate so much of it, I didn't have room for chocolate. And I didn't care!

She split the squash in half and roasted cut side down until they were browned on top, and then she peeled them with a knife and sliced the squash in to 1/2 inch or so slices. It doesn't matter if they wind up in uneven pieces - sheets of squash would be nearly impossible to slice! Just get the thickness approximate for each layer, and use in place of the pasta in your favorite lasagna recipe. Yummers!

Well...The Veggie Journey continues...I am still eating meat but adding more veggie meals as we go.

Below is a picture of Sunday's dinner....A mixture of veggies over rice and sweet potatoes. Then a soup Angie made last night with roasted parsnips, carrots, onions, ginger and vegetable broth...very tasty :)

Oh how I love my veggies.

When you stop to think about it, there is just an enormous ARRAY of veggies out there and what to do with them, as opposed to meat. More variety, more delicious-ness. More wholesome goodness. And an added bonus, for me anyway - more volume. Being a former super morbidly obese person - this is mucho importante' ;)

Veggies are our friends. :)

I'm gonna steal this recipe and make it sometime in the next few weeks. Sounds delicious!!! I'm new to spaghetti squash, but the one time I made it we all really liked it.
