I will post the recipe in the sticky forum - but this certainly deserves its own thread:

Read this on the Medifast recipe thread:

Home Fries
1 c thin-sliced radishes
1 T diced onion (omit unless you are on Maintenance)
garlic powder, salt, pepper or spices to taste (I used a garlic clove & salt)

Just cook the radishes and onion in a pan sprayed with butter Pam on medium-high heat. They're done when they are translucent and the edges are brown.

OMG - they seriously tasted like fried potatoes! If my DH hadn't seen me cooking them, he would not have believed they were not potatoes.... I'm completely satisfied.

We paired it with a chicken breast seasoned with Mrs. Dash Chicken seasoning. The house still smells awesome from this evenings dinner!

I started Medifast on Monday and was looking for some recipes. I tried yours tonight, and it was great! Thanks for sharing!!!!

I tried it too, and some of it had a bitter taste to it. I've never really been fond of radishes or turnips because of the bitter after taste I get. I know with some vegetables, if you soak them you can change the flavor, but I don't know how to. Is there a way to eliminate it?

Jehna, I found that the pieces that were not truly translucent (some of the thicker pieces) still had some of the bitter flavor. I just cooked them a bit longer until I could see through them (no white or cloudy white) and they browned on the edges, almost crispy like... I used my mandilin (spelling) slicer.

Ah, I used my food processor so some of the slices were a lot thicker than others. I'm always afraid to use my mandolin. I'm afraid I'll cut my fingers off!, Ha!

Hmmm, it is a little funny that you said that... my poor hubby lost a bit of his finger yesterday. He had put one of the blades in backwards and when he picked it up it bite him :^:

I definitely use the shield, especially with the radishes.
