South Beach Recipes - Homemade Turkey Sausage Recipe

I have some ground turkey breast and would like to make my own turkey sausage. Does anybody know of a good recipe or which spices to add?
I am thinking fennel, sage, salt and pepper but would like any ideas on what to add.
