I know I'm just popping in and out. Write and run... busy week with first week of school, Bella's shows (so back and forth on phone etc with her breeder) and now my girls are auditioning for Nutcracker today. My life MAY slow down next week.

In other news.. think my period is on it's way and that's accounting for the "stay at the exact same weight every single day" for the past 7 days

Mmmm..baking butternut squash casserole now..seriously LOW, LOW calorie and SERIOUS YUM!!!!

2-10 ounce bags butternut squash (frozen)
1/2 white onion diced
1 4oz. lean ham steak
non-fat cooking spray
season w/s & p

Sautee the above until squash just begins to brown. Place into 9 x 9 casserole. (optional) Top with finely shredded cheddar--just a lil' bit. Bake @ 325 for about 10 minutes. Once it comes out you can also top with f-free sour cream.

YUMMMMMMMMO! This casserole is already GONE!!!

The entire casserole is less than 250 calories!

You can find butternut sqaush pre-cooked and frozen?

Wow--now there's a convenience food! I have a butternut squash languishing on my counter. I need to find the courage to go whack it with my big knife.

Alana! Yes, I agree a HUGE convenience food for us too. I can find it @ an HEB store (Central Market) or Whole Foods. You can also find sweet potato diced and ready to go at WF with no additives.

LOL---get out that knife! Fresh is even better!
