spinach tomato and feta is such a good idea, i never considered the combo! i usually just put chopped tomato and some cheddar and onion

I need a little yellow in there, so I throw in a little sharp cheddar cheese. And I always slice up tomatoes and have them on the side.

I do tomato, red onion and a little bit of cheese. I tried putting some goat cheese in (less calories and fat too) and it was sooo good! This is one of my favourite breakfasts.

I don't do egg white, I do egg beaters... but I keep it pretty simple. Usually a 1/4 cup cheese and some sliced up lunch meat.

-sauteed spinach, mushrooms and onions
-sauteed peppers, mushrooms and onions

I've really been known to put almost any veggie combo in there. I LOVE omlettes. I like to make a bunch of veggies and keep it in a container and have it ready to go for a few days at a time.

My favorite: baby spinach, chopped onions, and mushrooms all sauteed, and a slice of the precooked 40-calorie bacon, crumbled, and some swiss cheese. Yummy.

I also do plain spinach, or whatever leftover veggies I have form dinner the night before. Broccoli is good, so is salsa, or asparagus.

I usually use Egg Beaters rather than egg whites.

Packed-in-water (drained!) roasted red peppers, sauteed onions, a little cheese. Also one regular egg, the rest whites.

I need a little yolk, so I do one whole egg and two egg whites. (Sometimes just 2 whole eggs and forget about egg whites). The last one I made I took 2 pre-cooked turkey sausage patties, chopped them up and sautee'd them with green peppers and onions. Then when the whole thing was done, I folded it around 1/4 cup grated 4-blend Mexican cheese. Mmmmmm. It was really tasty!

I know, I never thought of it either till recently and I'm not sure why the heck I didn't. Fried cabbage, onions and egg noodles was one of my FAVORITE things to eat back in the day. And there I was sitting with a half a cabbage in my fridge and I figured I'll give it a go. So, I sauteed it with onions, and plopped it in the middle of some egg whites and - ta da. FABULOUS omlette. Just fabulous.

I used green cabbage and sauteed it in a bit of oil with the onions till nice and browned and added some salt and pepper.

My favorite omelet is one yolk, two whites, sauteed Granny Smith apple, crumbled turkey bacon, and low fat blue cheese.

Robin, I have it right here on a sticky pad to buy me some cabbage and give your idea a try. :)

Cabbage?? Apple??? Sorry to be lurking around the 100 lb club, but definitely not sorry enough to keep from bookmarking this thread! What GREAT ideas!! I hate eggs but I'm definitely drooling... as I write next weeks grocery list.

Pita, do you use the whole apple?

When I am tired of omelets, I scramble egg beaters/egg whites with summer squash. Either grated zucchini, sauteed until soft, or the crookneck/yellow summer squash sliced in thin coins, sauteed. I mix that into my scrambled aggs and it is heavenly!!

I'm with Onederchic on the egg yolks. I'm not really an egg person though, I have them maybe once a month. (once or twice a week when I'm at my boyfriend's, I make breakfast for him on his days off).

I like jalepenos, onion, and garlic powder in my eggs.

Um, egg yolk :) (I just use the whole egg) mushrooms, onions, whatever colour of peppers I've got in the house, tomatoes, zucchini, sometimes broccoli.

I peel, slice, and saute the apple in a little butter cooking spray until it's lightly brown on both sides, then I add it to the omelet.

Apple, onion, and brie. I also use this combo on sourdough for a yummy "adult" grilled cheese. It works with muenster, too, but it's not quite as snappy.
