Can someone tell me the calorie content and nutritional stats for quinoa? What I'm reading varies, and some sources say it has like 600+ calories per cup. Is this possible? I've been eating it some in lieu of rice but if it's crazy high calories I guess I'm gonna have to stop...

a cup of COOKED quinoa is 222 calories.
Uncooked is 626.
Remember that it expands as it absorbs the water and becomes tender.

I like to take quinoa and throw it in a fruit salad with berries. Like blackberries, strawberries, blueberries. I bet a little bit of honey in there would be good too.

Quinoa tabbouleh is amazing - if you like parsley, which I do :yes:
The recipe that comes closest to the one I've used is this:

But, much as I like basil, I personally wouldn't put it in tabbouleh... Also, I think I usually add some scallions.

Whenever possible I have tried to get to know and like the natural taste of something without a lot of sauce and seasonings.

I always eat quinoa savory not sweet, though it is supposed to be an excellent breakfast food- the way Mama fixes it sounds yummy. I generally top it with sauteed veggies and a little feta or parmesan or just eat it how I would eat rice or couscous - hot or cold.
But, the other day in Trader Joe's, it was the sample, and I love how they prepared it. Very simple and very flavorful - so I will be making this sometime this week. All she did was saute it dry for a moment in the pan until it browns slightly, then cook in broth (I normally cook rice, couscous, and quinoa in broth), and then added a jar of sundried tomatoes and saute together. It was so tasty - had that olive oil, sundried tomato taste. Delicious. I have the jar of tomatoes sitting on my counter right now!

I have never heard of Quinoa. Do you buy it at any grocery store? I am interested in trying this!

Most grocery stores will have quinoa, usually in the same aisle as rice but I will say the cheapest place to get it would be anywhere with bulk bins such as Whole Foods or a health food store/co-op.

Awesome, thank you very much... I will have to try it! I WISH we had a whole foods here, I use to goto one in New Orleans all the time. All we have here are basically Kroger's and Wal-Mart.

I don't know how your Kroger is set up, but the quinoa in my Kroger is in two spots - in the organics isle, and in the flour isle on a display of Bob's Red Mill flours. I haven't been able to find it anywhere else at Kroger, so if you don't find it with the rice, don't give up!
