They mention wild rice, oats, and whole-wheat pasta, but there are lots of other cheap whole grains, too, especially if you buy in bulk. I got a huge bag of Bulgar for $1.50 last time I went to the store (in the Hispanic food section - who knew?). Quinoa and barley are others that I've bought for cheap.
Also, in addition to tofu, another cheap soy product is TVP (textured vegetable protein). If you get the granules or small flakes, you can use it in place of ground meat. And it lasts FOREVER if you store it in your freezer!
I don't know if they left off meat to be vegetarian-friendly or what... but there's definitely meat for under $1 a serving, too! I can find chicken leg quarters for $0.49/lb once in a while (often a big 10lb bag of frozen ones). The cheapest ground beef can be made lean by draining really well and even rinsing it. Or I can usually get 1lb of frozen ground turkey for $2 (which is way more than 2 servings if you stretch it out like I do!). And you can have homemade stock for FREE (well, the cost of gas or electric to run your stove or crock pot) by saving all your bones, chicken skin, veggie ends/peelings, etc.

Thank you. I love this idea. There are some excellent ideas on the list. Most of them I am doing--I will admit not doing Kale on a regular basis. I absolutely adore my bulk bins at the Farmer's Market. I am happily making my way through them. Quinoa, 6-grain cereal, steel cut oats, Millet, flaxseed, and the list goes on.
I would also have to add tuna to this list of 20.
We should start a list of best finds under $1 as a thread! Maybe OP could?
