I found an almond cookie recipe and liked it so much I wanted to find others but couldn't seem to find anything without all purpose white flour. When they started being available in local stores here, I started experimenting with different types. The Bob's Red Mill site has a ton of recipes (http://www.bobsredmill.com/recipes_search.php?product_ID=all&category_ID=32&product_ID=all&keywords=&submit=%3A%3A+search+%3A%3A) for ideas. I've used white bean flour (very neutral taste), almond flour, WW pastry flour, etc. to make all kinds of things.
