Question Prepping Veggies & Nutrient Loss

Does chopping up all my vegetables at the beginning of the week lead to a significant nutrient loss?

I've noticed that it takes me forever to prepare my lunches for work each night, so I would really like to do all of the prepping and chopping for the whole week on Sunday night. I know that the veggies (tomatos, carrots, peppers, etc) may lose some nutrients, but I'm not sure how significant the loss would be.

Any ideas? Does anyone do all their prepping in advance? It certainly would avoid all of the food related stress during the week

I honestly do not know the answer to your question but I would say that if there is a nutrient lose from chopping earlier in the week, it would be minimal compared to not getting your veggies at all. I, too, chop my veggies in advance as it ensures that I get them in!
