Can I make meatballs without breadcrumbs? Will they hold together enough? In essence could I just use meat and some finely diced onion and bell pepper and spices?

Just don't overwork the meat! I keep mine moist with grated onion and zucchini...yum! KforKitty 05-19-2009, 05:16 AM I bind mine together with tomato puree, no breadcrumbs - works great. Kitty rockinrobin 05-19-2009, 08:34 AM I use a couple of egg whites to help hold it together. Oh and I love the idea of the grated zucchini. Thanks Amanda. kittycat40 05-20-2009, 11:34 AM I use rolled oats (reg. oatmeal) instead of breadcrumbs in my meatloaf. It works great! Thighs Be Gone 05-20-2009, 11:37 AM I do the same as RR--just egg whites usually. I use ground turkey that is pre-seasoned. I am not sure if that makes a difference. vBulletin® v3.6.7, Copyright ©2000-2012, Jelsoft Enterprises Ltd.
