Default Random Act of Yummyness

SO I ahve a silicone muffin pan
I tripled the 1 min flax muffin made it sweet and nuked it for 3 minutes now I have 6 yummy muffin sized Flax muffins!

I only have one silicone pan, but picked up three silicone cookie and browning sheet at Goodwill. They stain easily, but cook very well. The mini-muffin silicone pan is great for the Swiss-Bacon Bites from Eggface.

I'm teaching my little GKs to work in the kitchen and yesterday my GD and I made a Chocolate cake from the Splenda cookbook. I swapped out the splenda for Whey low. It was my first time baking with whey low and my DH is still raving about it. I think the whey low has 4 cal. per tsp so it isn't calorie free!!! Splenda bakes so darn dry. We also made Eggplant lasagna, and my little GD thought she was great because she got to use a "big" knife to help cut cheese up. We are going to have a GK cooked meal every Thursday from here on out until school is back in session. I found out that they will eat what they make and it helps the 8 y/o with fractions. BOY WHAT A MESSY KITCHEN I HAD! LOL!!!

I will have to look for a silicone muffin pan for the micro. How does the muffins store? I haven't made more than one at a time.

How are your foot and teeth healing? I've got all of these little things that need some kind of medical intervention and they are driving me crazy. I have a partially torn tendon in my left foot, a few big fat hernias, a spur and
torn rotorcuff in my R shoulder, a nagging STUPID DUMB back and a big lump at the top of my sternum that was broken at some time and now is filled with arthritis and hurts like heck. BUT, I'm able to manage and am ALIVE and kicking, so I can't ask for more. Just went to see my oldest grandson get an academic award and a nice luncheon. Pizza and salad.....ate the salad and the pizza topping. I was surprised at how fast the salads went and how many kids I saw eating them. Thrilled in fact. I'm doing the five mile "Race for a Cure" walk on Saturday with my DD, and two GS. I will be walking for my grandmother, my aunt, and my DIL's sister then we are going to celebrate my GS 18th birthday at the Mongolian BBQ. I love that place and they honor my WLS eating card.

I'd like to have one of those muffins right now with a nice cup of tea and my warm down blanket and snooze. GKs are gone, but that darn little Yorkie will not leave me along. He is crying because I won't let him under my blankie!!

Made the Muffies again I added another egg. . .This way I didn't have to put the carton back in the fridge and added a dollop of SF Strawberry Jam. . .next time I'm goign to put the Jam in the Middle b/c they came out a little Ugly but delicious!

Also I made Tuna Muffies (well Loaf as my 6 cup muffie tin was in service) but instead of celery onions and peppers I used Frozen Spinach and onions done in some Olive Oil Cooking spray with steak seasoning added 2 tbsp of Parm and 1/4 cup of Mixed italian cheese
Next time I'm adding garlic! soo good!!

You are getting to be a cooking machine!!!! "KO House of Protein Delights"......sounds like a good name for a restaurant! I'm trying to create a really, really, good dessert for all of us low-carbers for my GS graduation party on Sunday. I don't just want to look at the cake, I want to eat some so.....I'm on it.

Could you use Almond Meal? Or How about Making the egg/flax Carrot Muffin but multiplying it to be big enough for a cake pan or Pyrex Dish
Also some people make the Flax Muffie with Almond meal instead you could try that in singular first and then see?
How about the "magic" PB cookies?
Look on the South Beach Ph 1 Thread there are some good ideas!

Found this in Ph 1 Desserts
3 Minute Flourless Chocolate Cake


- 1 T. smart balance
- 2 T. unsweetened cocoa powder
- 1 egg
- 2 T. sugar free syrup (like DaVinci) or skim milk
- 4 t. splenda

Microwave smart balance margarine for 15-20 seconds until completely melted. Whisk in cocoa, then egg, then syrup (or milk) and splenda. Microwave on high for about 1 minute (watch closely – may need less time). Cool completely or serve slightly warm.

Ok So seriously maybe I should make a WLS friendly cookbook?
I made Flax brownies today
They could use some tweaking but so far so yum
Basic triple recipe with 2 5 second sprays of butter flavor cooking spray (my lazy butt will get some kind of Fat product to bake with I swear!)
1/4 cup Cocoa
3 pkts splenda (or to taste)
1/2 cup SF Strawberry Preserves
Mix all dry ingredients together Beat in Eggs vanilla and fat mix in Preserves (heating might make this easier) till incorporated but speccy
Spray 8X8 pyrex Pop in micro for 4/ 4.5 minutes you wil have 1 squishy spot in the middle

*I'm too cheap to buy the SF syrups but I'd imagine the different flavors would be fabu or the WF sf choc syrup!
They're not the caliber of my sin brownies ( which is full on food porn) but for 125 calories 9 g of fat 4 grams of fiber and 6 grams of protein not bad!!
I had it for breakfast today with my Protein coffee

These are not things I made But they are super good
1 Emerald nuts cocoa roasted Almonds best part they come in a 100 calorie pack
2 Edamame I nuked some last night to put in my stirfy and had a half a cup (seasoned) on its own today as a snack
